You make this with the leftovers from your Christmas dinner
An annual recurring thing is my mother's fridge filled to the brim when the whole puppet show is over. How it happens, I don't know, but even after two days of food fest, the fridge remains overcrowded. I like to hang out for another day in the south for a leftover afterparty. The leftover casserole has since been named 'Van Gansewinkel' (that garbage truck, yes) and so an extra brioche bread is always bought so that there is definitely a fridge bread pudding on the table. You don't have to go to the supermarket for now, but do you have no idea what to do with all those Christmas leftovers? With these dishes, you can hold on to the Christmas feeling a little longer, and they are also quick to prepare. of Christmas stollen.
French toast 4 slices of Christmas stollen
splash of milk
2 eggs
stick of butter
1. Whisk the eggs together with the milk. Add the cinnamon.
pinch of cinnamon
powdered sugar
2. Place the Christmas stollen in the egg mixture and let it soak for a while.
3. Heat a large frying pan and let the butter melt.
4. Fry the slices until golden brown and serve with some powdered sugar.

leftover turkey or chicken
2 tbsp truffle mayonnaise
leaves of romaine lettuce
1. Toast the slices of bread briefly under the grill or in a toaster. Then spread them with some olive oil.
2 tomatoes

2. Spread the truffle mayo over two slices of bread.
3. Top with the chicken or turkey, lettuce, and tomato.
4. Grate some coarse parmesan over the sandwiches and cover with the two remaining slices.

1 red onion
2 cloves of garlic
ball of (buffalo) mozzarella
2 eggs
Italian herbs of your choice
1. Clean the onion and garlic and slice the onion into half rings and chop the garlic finely.
2. Grease a large baking dish with some olive oil and add the vegetables, tomato, potatoes, onion, garlic, and bacon bits to the dish.
3. Whisk the eggs with a little milk and add the herbs.
4. Cut the mozzarella into cubes.
5. Pour the egg mixture over the dish and top with the mozzarella.
6. Bake the casserole for about 30 minutes until cooked through.
The best bread pudding EVER.
4 slices of leftover brioche bread or 6 croissants
225 ml heavy cream
150 grams of sugar
4 tbsp whiskey
150 ml milk
2. Tear the bread or croissants into pieces and place them in a baking dish.

1. Preheat the oven to 180 degrees.
3. Put the sugar and two tablespoons of water in a saucepan and shake the pan until the sugar is dissolved.
4. Place the saucepan over medium to high heat. Let the sugar water caramelize by reducing it until it has a nice golden color (this takes about 5 minutes).
5. Remove the pan from the heat and first stir in the cream, then the bourbon and the milk.
6. Whisk everything together well and then, still whisking, mix in the eggs. Pour this mixture directly over the pieces of croissants/bread in the dish and set aside for 10 minutes.
7. Bake the bread pudding for about 20 minutes until golden brown and serve warm.
