Huevos rancheros

I really think breakfast is a celebration. I even think that it is my favorite moment of the day.

Whether it's at a richly set table, in bed, or in a cozy little brunch tent with a good cup of coffee and nice company, with a perfectly cooked egg, fluffy pancakes, a delicious bowl of yogurt with homemade granola, or a slice of sourdough generously topped with perfectly ripe avocado and a pinch of coarse sea salt, it's more than good as far as I'm concerned.

 
These huevos rancheros are a traditional Mexican breakfast that you I noticed again how friendly everyone is there. Taxi drivers, customs officers; they all ended their sentences with 'ma'am' or even better: 'My love'. Bitter people among us immediately say: they don't really mean it. I actually don't care, it just sounds nice and brightens up your day. Funny enough, the top 3 is dominated by British Commonwealth countries. That can't be a coincidence. often see on the menu.

 
Maybe a bit too intense for you, but believe me: your loved one will be very happy with this.

Ingredients

  • olive oil
  • 2 tortilla wraps
  • 2 to 3 eggs
  • 400 grams of black beans
  • juice of 1 lime
  • 1 ripe avocado
  • 100 grams of feta
  • sriracha (or another spicy sauce)
  1. Place a frying pan over medium heat and heat some olive oil. Fry the tortilla wrap until lightly crispy for 1-2 minutes. Set aside.
  2. Fry three sunny-side-up eggs in the hot pan.
  3. Mash the black beans with the lime juice and season with salt and pepper. Cut the avocado into strips and crumble the feta over it.
  4. Spread the beans over the tortillas, top them with the eggs, avocado, feta, and sriracha sauce.
  5. Garnish with an extra lime wedge.
