Winter meets spring salad
Although I can't wait to conjure only spring on my plate, there are still winter delights that I find hard to let go of. Winter of vegetables such as pumpkin, Brussels sprouts, salsify, and kale, for example. That's why today it's winter with a touch of spring. This lukewarm salad is super quick to prepare and tastes perfect with a small glass of rosé on your rooftop terrace. And the leftovers can, hats off, be taken as lunch tomorrow.
Easy peasy kale salad
- 200 grams of fine kale
- piece of parmesan
- a pack of pine nuts
- 1 avocado
- clove of garlic
- bunch of spring onions
- pomegranate
Dressing
- 6 tbsp white balsamic vinegar
- 3 tbsp olive oil
- 1/2 tbsp mustard
- 1 tbsp honey
- Mix the ingredients for the dressing.
- Blanch the kale briefly, drain, and then squeeze the dressing into the kale for a few minutes.
- Press the garlic clove and add it to the kale. Refrigerate for at least an hour so the dressing can soak in well.
- Grate the Parmesan coarsely, cut the avocado and spring onion into pieces, and clean the pomegranate.
- Toss all the ingredients through the kale.
