Lebanese sandwiches with hummus and grilled vegetables
I LOVE Lebanese cuisine. I always have a couple of eggplants in my fridge (smoked is the best), can easily scoop up a bowl of hummus, and dream at night about warm pita bread filled with homemade falafel or salty halloumi. When I have guests, I prefer to fill the table with the tastiest mezze, but unfortunately, that often takes a lot of time. I thought. But that’s not true at all. These warm pitabreads topped with hummus, thick yogurt, and grilled vegetables, are on the table before you’ve even put on your comfy outfit. Enjoy your meal.
- 1 bunch of baby carrots, cleaned
- 1 bundle of green asparagus (ends trimmed)
- 1 tbsp Za’atar (optional and available at the spice shop on the corner)
- 1 large Lavash bread or pita breads
- 6 tbsp hummus
- 5 tbsp full-fat Greek yogurt
- handful of sun-dried tomatoes
- block of feta
1. Heat a grill pan over high heat.
2. Grill the carrots and asparagus until tender and grill lines are visible.
3. Spread a generous spoonful of hummus on the top of the bread or breads and spread the yogurt on top.
4. Place the grilled vegetables on top and sprinkle with za’atar.
5. Place on a nice plate and crumble some feta and the tomatoes over the breads.
