Today we are having soup, avocado soup

When it's so warm that all you can think about is salad and barbecues, we eat light. And preferably cold too. Soup is a contender or something delicious with avocado. But now I saw that our colleagues from FavorFlav are mixing those two together. You get cold avocado soup from that. Never heard of it before, but I can't wait any longer.

Ingredients

  • 4 ripe avocados
  • 2 tablespoons of olive oil
  • 2 large handfuls of leaf spinach
  • 3 ice cubes
  • a handful of basil, finely chopped
  • 4 radishes, sliced thinly
  • 1 teaspoon smoked, spicy paprika powder
  • 4 slices of thinly sliced bread (toasted)
  • juice of 1 lime
  • 0.5 l sparkling water
  • sea salt
  • black pepper

Preparation

Cut 1 avocado into cubes and set aside. Puree the remaining avocados, the leaf spinach, and the ice cubes with the olive oil, lime juice, and sparkling water using an immersion blender or blender. Season with salt and pepper.

Divide the soup among four bowls and garnish with the avocado cubes, basil, radish, and toast. Just before serving, sprinkle the paprika powder over the soup with some extra salt, pepper, and olive oil.
