  • 250 g fresh white or green asparagus
  • 4 slices of pain de campagne or other white bread
  • 2 organic eggs
  • 1 tbsp salted butter
  • 2 tbsp mayonnaise
  • 1/2 tsp Dijon mustard
  • 2 tsp lemon juice
  • 100 g smoked salmon or crispy bacon
  • 1 container of garden cress
  1. Preheat the oven to 200 degrees.
  2. Peel the asparagus and remove the woody ends. Then cut them in half, place them in a pot of water, and bring to a boil. Cook for 10 minutes, turn off the heat, and let them sit in the hot water for another 10 minutes. Drain.
  3. In the meantime, cut 4 slices of bread. Toast them for a few minutes in the oven or in a hot grill pan.
  4. Meanwhile, bring a pot of water to a boil. Add the eggs and cook for 6 minutes. Rinse them under cold running water and peel them carefully.
  5. For a quick but intensely delicious hollandaise sauce, melt the butter in a saucepan. Stir the mayonnaise, mustard, and lemon juice together and slowly add it to the butter while stirring with a whisk. Season with pepper.
  6. Top the toasted bread with the warm asparagus, smoked salmon, boiled egg, and some sauce. Garnish with the garden cress.
