This treat you want on your Easter table

Besides the fact that I am a huge team Christmas fan, Easter is really my favorite. Why? Well, partly because in my mind it marks the start of spring, but mainly because we traditionally spend hours at a long brunch table in the garden after gathering Easter eggs in the garden, preferably set with a yellow checkered tablecloth, fresh daffodils, and especially a lot of treats. Do you also have a brunch on the agenda and no idea what to put on the table? I can lend you a hand.

French omelet with smoked salmon and sour cream

  • 3 free-range eggs
  • handful of chives
  • 2 tbsp parsley
  • 1 tsp dried tarragon
  • knob of butter
  • pack of Delicieux smoked salmon selection
  • cup of sour cream
  1. Break the eggs into a bowl and add the herbs to the eggs.
  2. Season with salt and pepper and whisk the eggs.
  3. Heat some butter in a pan over medium heat. Make sure the entire bottom is covered with butter.
  4. Pour the egg into the pan and let the omelet cook gradually.
  5. After a minute, fold the omelet in half with a spatula.
  6. Serve with smoked salmon, sour cream, and sprinkle some extra chives over the dish.

Fresh scones with homemade jam

Normally, I would get my hands in the flour myself, but since I bit into the fresh scones from Delicieux, I can't actually make the British delight any better. And why make it difficult when you can just slide the rolls straight from the packaging into the oven? It gives you plenty of time to whip up a little jam.

  • container of fresh strawberries
  • 1 tbsp chia seeds
  • zest of half a lemon
  • 2 tbsp maple syrup or brown sugar
  1. Heat a small saucepan with a little water over medium heat.
  2. Clean the strawberries and halve them.
  3. Put the strawberries in the saucepan and let them simmer over medium heat.
  4. Add the maple syrup or brown sugar and lemon zest and let the strawberries cook gently over low heat.
  5. Finally, stir in the chia seeds and turn off the heat.
  6. Let the jam cool completely and store it in the refrigerator.

Easy Easter bread

  • 120 g cold butter, diced, plus extra
  • 300 g mixed dried fruits
  • 200 ml Earl Grey tea
  • 350 g flour
  • 120 g light brown sugar
  • 2 large eggs
  • 1 tsp baking soda
  • 200 ml buttermilk
  • 1 tsp speculaas spices
  1. Preheat the oven to 170 degrees and grease a loaf tin with butter.
  2. Line the tin with baking paper and fold it over the edges.
  3. Put the fruits in a bowl with the black tea and let them soak for a few minutes.
  4. Put the flour in a bowl, add the butter and rub it through the flour until crumbs form.
  5. Stir in the sugar and break the eggs over it.
  6. Mix in the baking soda, buttermilk, and cookie spices, followed by the soaked fruits.
  7. Scoop the dough into the loaf tin and bake the bread for an hour.
  8. Let the bread cool in the tin, turn it out onto a rack, and slice it.
  9. Serve with good butter and spicy farmhouse cheese.

Spring smoothie

  • 500 ml fresh juice
  • whole mango
  • juice of a lime
  • 2 passion fruits
  1. Put all the ingredients in a blender or food processor.
  2. Then blend until smooth.
  3. Serve in four glasses. Cheers!
