From Monday to Sunday: how you can easily go a week without eating meat

All carnivores gather: it's time to shake things up. In the spirit of ‘you're never too old to learn’ and ‘a change of diet does good’: try going meat-free for a week. Because wow, it's National Meat-Free Week. And this is what my weekly menu looks like…

Monday: chili sin carne

In the category of comfort food for the couch and perfect to kick off the week: a pot of chili. Chill because it's easy and especially quick to make. You usually already have the spices (chili, garlic, cayenne, cinnamon, cumin, oregano) at home, just buy a bell pepper, onion, corn, tomato paste, and kidney beans for the mix. Tuesday: gado gado wraps with emping

An Indonesian recipe from Chicks Love Food that I've become addicted to. And believe me: you won't even realize you're eating vegetarian. With tofu, potato, green beans, Indonesian shallots, and peanut sauce. Check here how to make it.

Wednesday: vegetable stew à la Kiekster

It took me years to find vegetable dishes tasty. And suddenly I succeeded. Especially thanks to this stir-fry mix. Grab a wok pan. Stir-fry a bag of pumpkin cubes. Add half a box of chestnut mushrooms, half a zucchini, a can of kidney beans, a bunch of spring onions, and a few asparagus. Throw in a red bell pepper at the last minute (two minutes of frying so it doesn't get too crunchy) and you have a colorful plate full of vegetables. Then come the flavor makers: a clove of garlic, a cube of forest mushroom broth (mucho importante for the taste) and a tablespoon of curry powder.

Thursday: mushroom enchiladas

Easy peasy and on the table in no time. Fill the (whole grain) enchiladas with mushrooms, onion, and savoy cabbage and top them with a generous layer of cheese and sour cream. Tip: the enchilada spice mix from Santa Maria. If you want a fresh side dish, slice a few radishes into thin slices and mix them with corn and the peel of half a lime. Squeeze the lime juice out and season the whole with pepper and salt. I'm telling you: divine.

Friday: vegan sushi bowl

Life is sometimes so simple. Take a sushi bowl, but skip the fish and voilà: a vegan sushi bowl is born. Delicious with nori sheets, rice vinegar, avocado, wakame salad, edamame beans, spring onions, cucumber, you name it. Your party.

Saturday: creamy truffle risotto for the real bosses

Risotto always sounds so labor-intensive, right? It's not that bad. If you stir a bit, you'll be done in half an hour. Besides the mushrooms, Parmesan cheese, wine, and risotto rice, it's also very nice to add two tablespoons of mascarpone and basil. Creamy and comfort to the max.

Sunday: sweet potato fries with tempeh satay

A lot healthier than regular potato fries from the fryer and still tasty. Especially when you pimp them with garlic, Parmesan, and parsley and serve with a dollop of curry mayo.
