Heaven: Tuna Melt is what you want to eat for lunch

INGREDIENTS
- 200 g canned tuna, drained
- A few spring onions, sliced thinly
- Juice of . lemon
- 4 tbsp mayonnaise
- 4 thick slices of bread, rye or sourdough
- 50 g cheddar or Gouda cheese, grated
- Sea salt and freshly ground black pepper
- A few pickles, on the side
This cheesy sandwich is perfect for when you get hungry late at night. Oh so rich and oh so delicious.
Preparation
1. Preheat the grill to high. In a bowl, mix the tuna, spring onion, lemon juice, and mayonnaise together. Season with salt and pepper.
2. Spread the mixture evenly over the four slices of bread. Top with the grated cheese, place on a baking sheet, and grill until the cheese is melted and bubbling. Serve immediately, with the pickles on the side.
