SUPER FAST AND MEGA EASY: THIS VEGAN STIR-FRY DISH

My need for easy yet healthy food skyrockets in December. Thank god for our neighbors from online food magazine FavorFlav, who provide you with a nice recipe.
It works like this: I always have something in the fridge, so I can skip the supermarket. If I can find a recipe that is ready in 20 minutes, there’s no reason to order. Because: that is much more expensive and by the time you’ve chosen, the food is prepared and delivered to you, those 20 minutes have long passed. In short: saving money and time. I love that.
Often vegetarian, sometimes meat
What I also love: if something is (somewhat) healthy and preferably vegetarian. Am I a vegetarian? No (only once when I was eight, but then I thought cheeseburgers were vegetarian – because cheese – so that doesn’t really count). Flexitarian? If you want to call it that, I’m fine with it. I just call it: I often eat vegetarian and sometimes meat.
Protein bomb
Tofu, tempeh, falafel, I love it all. And recently I’ve also become addicted to something new: Pulled Oats from Gold&Green, a meat alternative based on Nordic oats, broad beans, and peas. Delicious in texture and taste, healthy, vegan, and super quick to prepare. Moreover, a real protein bomb with no less than 30 grams of protein per 100 grams. You get it: I’m a fan (and if you’ve seen this test, you know I’m not the only one).
It can be combined in various ways, but one of my ‘quick-healthy-no-delivery-apps-needed’ dishes is definitely this stir-fry dish with broccoli, bean sprouts, Pulled Oats, and noodles in teriyaki sauce. De-li-cious. And on the table in 20 minutes. What more could a person want?
Here's how to make it:
- Heat the oil in a frying pan. Add the ginger, garlic, carrot, and broccoli florets and sauté for 3 minutes. Stir occasionally.
- Add the Pulled Oats and teriyaki sauce and sauté for another 2 minutes. Keep stirring.
- Add the cooked noodles. Stir everything together and serve immediately!
- Garnish with bean sprouts, coriander, sesame seeds, and a slice of lime. Add the red chili pepper for an extra kick.
