An omelette in the French style

Say wine, snacks or haute cuisine and the gourmands at online food magazine FavorFlav know where to drink, how to eat it and what to cook. This time our cheffies serve you: the French omelet by Vjeze Fur.
When we heard that Instagram legend Vjeze Fur was releasing his own cookbook ‘Lekker Fred’, we fervently hoped for one thing: the recipe for his perfect French omelet. Our prayers have been answered. And now we practice.
Freddy: ‘This dish is perfect for when you want to weigh a hundred kilograms! If you’re already fat, you’ve practiced a lot and can make this omelet in ten minutes. If that’s not the case, take twenty minutes for it. Get enough eggs in the house in case it fails (which is bound to happen anyway).’
Here's how to make it:
- Chop the chives very finely and set aside.
- Beat the eggs with a splash of milk (or cream or water, whatever you want) and add a pinch of salt.
- Take a pan with a really good non-stick coating (without a good pan, it will never work). Put the butter in the pan, let it melt over medium heat without browning. Add the eggs. Keep stirring and shake the pan back and forth, it shouldn’t all start to set.
- When the top is still wobbly and moist, you need to start folding it. This is quite difficult and sometimes it goes wrong. But they are eggs, not truffles. If it goes wrong, you try again. Slide a spatula under the omelet and fold half of the omelet over. Repeat this with the other side.
- Put it on some toast and sprinkle the chives over it. For extra indulgence, spread a bit of butter on the omelet.
