If we can't go to our vacation destination, then the vacation destination simply comes to us. How? Well, eat as if you're there, of course. Because let's be honest: eating is half of your vacation feeling.

1. Off to Tel Aviv
Join NENI for a divine light falafel with popcorn (!) as the main ingredient, or create a table of chaos. NENI buzzes, swirls, and whirls, and that's exactly what you feel when you step into the restaurant. It's the top spot in Amsterdam and absolutely the favorite of the editorial team. Oh, and the house chardonnay is so good that you'll definitely order an extra glass. I want to eat here every week.

2. Round trip to Japan
You actually sit down in chef Yamamoto's own kitchen on Eendrachtsweg in Rotterdam. Every course I was served came with a matching sake, and the dishes seemed more like works of art to frame, but they were mainly meant to be eaten. Yamamoto was scouted at a Japanese cooking school by Hotel Okura, worked at Huson, and has had his own refined restaurant for years now. Yama is an experience in itself.

3. La Vespa in Laren and Bussum
Pizza as if you're getting it straight from Italy on your plate. You recognize La Vespa by, yes: the Vespa in the window. On the table are checkered tablecloths, you drink Peroni beer, and your pizza naturally comes from the wood oven.

4. To Marres in Maastricht
Forgive my love for Mediterranean food, but if you're in Maastricht and also love this cuisine, go to Marres Kitchen. With the baba ganoush, you literally lick every finger (not very corona-proof, no) and I've ordered the oven-baked eggplants twice. Marres has an amazing inner garden and is also very suitable if you eat vegan.

5. The best Greek in the Netherlands
As a fervent Greece recidivist, you can wake me up for Greek food, and that's why I wanted to know what the best Greek in our country actually is. It's located in Capelle aan den IJssel, I've heard. Irodion seems to be the authentic cuisine in a trendy outfit, exactly what I hoped for because Greek cuisine is much more refined than a gyros at the taverna on the corner (even though I often find that excellent). I'm definitely going to stop by here very soon.
