At the metro exit Weesperstraat in Amsterdam is Bakhuys, and that's where you go for the best ham-cheese croissants in the city. And if they happen to be sold out, you can take the croissant with almond paste. Or a brownie. You can't make it that delicious yourself. But that salad with watermelon and mozzarella that they have in the display, I can definitely make that at home. And believe me: you can too, and you'll surely make it more often.

INGREDIENTS
Piece of watermelon, cut into small cubes or pieces and remove the seeds
1 container of mozzarella balls
arugula
1 lime
2 tablespoons of clear honey
5 tablespoons of olive oil
a handful of mint leaves, chopped, and some extra to sprinkle over the salad
pine nuts, roasted

Cutting the watermelon is a precise job. I know you can just eat those black seeds, but somewhere in the back of my mind, I still have the thought that a watermelon plant will grow in my belly. In that same back of my mind, I also believe that chocolate milk comes from brown cows and that you get muscles if you eat spinach, so it's not entirely based on facts. In short, I cut the watermelon into small pieces and pick out all those seeds, so I don't have to stress about it anymore.

Lime even better
I always made the dressing of honey and olive oil with fresh mint using lemon juice, until one time the lemons ran out and I was forced to use lime. That's much better! And the zest of the lime goes over the watermelon. For this salad, it's best to buy those small mozzarella balls, but make sure they're made from real buffalo milk, so the expensive and very tasty mozzarella. If that's not available, just choose a large ball and accept that it won't be as photogenic. Burrata? Quite a good idea, I'll try that too.

Here's how to make salad with watermelon and mozzarella

  1. Mix watermelon, mozzarella balls (or pieces), and arugula together. Grate the zest of the lime over it.
  2. Make the dressing by shaking honey, olive oil, mint, and lime juice together in a jam jar.
  3. Pour the dressing over the salad, mix again.
  4. Sprinkle the pine nuts and the loose mint leaves over it.
