All those days eating at home; whether you order something delicious or love to cook in the kitchen yourself, we do get creative, right? Here’s another side dish with a high indulgence factor: green asparagus with deliciously melted cheese.

INGREDIENTS
500 gr green asparagus
2 tbsp olive oil
3 cloves of garlic, chopped
juice of 1/2 lemon
1/2 tsp dried oregano
chili flakes
salt
200 grams Gruyère or other melting cheese, grated
Parmesan cheese, grated

You already knew we love to incorporate Gruyère into all kinds of dishes: from madeleines to toasties. And for these asparagus bundles, it’s a top choice. But any cheese that melts well is great; Fontina or Manchego would also work very well here.

Here’s how to make the asparagus bundles with melted cheese

  1. In a large bowl, toss the asparagus, olive oil, garlic, and oregano with the lemon juice.
  2. Season with salt and chili flakes.
  3. Tear off four pieces of aluminum foil about 30 cm long.
  4. Divide the asparagus among the pieces of foil and sprinkle the melting cheese over them.
  5. Fold the pieces of foil closed (fold the edges up) and place them on a baking sheet in the oven.
  6. Heat for about 15 minutes and then check one package to see if the cheese is well melted and nicely stringy.
  7. When they are ready, you can sprinkle some extra chili flakes and possibly grated Parmesan on top. The more cheese, the better, right?
