I love ‘minimum effort, maximum result’ dishes. You know, those dishes that look (and taste!) amazing and that you can put on the table in no time. Call me lazy, call me efficient, either way, after the success of the apple pie toast, I have a new favorite: the pancake cake.

For as little effort as possible, buy ready-made pancakes, which have the advantage of stacking well, but are otherwise crap. So come on, make them fresh (tip: with ripe banana in the batter!) and make them a bit thicker than usual, so that they don't collapse or tear during stacking.

Ingredients

  • 18 pancakes
  • 125 grams of blueberries
  • 125 grams of raspberries
  • 125 grams of blackberries
  • 800 ml blueberry fruity yogurt
  • 100 grams of lemon curd
  • 150 grams of raspberry yogurt

Here's how to make a pancake cake

1. Place a pancake on a nice plate.
2. Spread a layer of fruity yogurt on it with a spoon.
3. Keep stacking pancakes with layers of yogurt, jam, lemon curd, and fruit.
4. Save some yogurt and fruit for the top.
5. Generously spread the top pancake with yogurt and garnish with berries, blackberries, and raspberries.
