The tastiest recipe for banana cookies

After 2020 brought us many other special things, The Spring of Banana Bread, we are now quite ready for new recipes to use up those bananas (which we still let turn brown in the fruit bowl). Enter: fried banana cookies!

INGREDIENTS
For the banana cookies

about 1 liter of oil for frying, such as peanut or sunflower
3 very ripe bananas
60 ml whole milk
150 g flour
2 tbsp light brown sugar
1 tsp ground nutmeg
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp ground cinnamon
pinch of salt
powdered sugar, optional

For the rum sauce

115 g butter
50 g light brown sugar
50 g dark chocolate, finely chopped
120 ml brown rum

Super simple as well, with an outstanding tropical kick from the chocolate-rum sauce. Yum!

Here's how to make the fried banana cookies

  1. Pour a layer of about 3 cm of oil into a deep frying pan or casserole.
  2. Heat to about 160° C, or until a crumb of white bread you throw in turns golden brown.
  3. In the meantime, mash the bananas in a large mixing bowl with a fork, not completely smooth.
  4. Add the milk and mix.
  5. In a medium bowl, mix flour, brown sugar, nutmeg, baking powder, baking soda, cinnamon, and salt.
  6. Add these dry ingredients to the bowl with the banana/milk mixture and stir briefly.
  7. It certainly doesn't have to be a smooth batter; chunks make it even tastier.
  8. Scoop a full tablespoon of batter into the hot oil, turn the cookies occasionally, and fry until they are nicely golden brown.
  9. Adjust the heat as needed in between.
  10. Scoop the cookies onto a plate lined with paper towels using a slotted spoon.
  11. Sprinkle some powdered sugar over them if desired and serve with the rum sauce.

Here's how to make the rum sauce

1. Melt the chocolate pieces in the butter with the brown sugar, in a tall saucepan over medium heat.
2. Continue whisking with a whisk until it becomes smooth after about 2 minutes.
3. Add the rum and keep stirring until the mixture thickens slightly after about 3 minutes of boiling (the mixture will occasionally bubble up during boiling, briefly remove from direct heat then).
4. Turn off the heat and let the sauce rest for five minutes before serving it with the banana cookies.
