Gin and tonic cake

Calmly weighing, patiently beating, attentively glazing, and then rewarding yourself with a big chunk of gin and tonic cake – the tension just melts away. And yes, you can lick the beaters.
Ingredients
- 3 eggs
- 175 grams self-raising flour
- 1 teaspoon baking soda
- 1 pinch of salt
- 250 grams sugar
- 1 packet of vanilla sugar
- 50 grams of butter
- 250 grams Turkish yogurt
- 8 lemons: 1 for the cake, 5 juiced, 2 scrubbed clean and sliced thinly
- 125 grams brown sugar
- 6 tablespoons tonic
- 2 tablespoons gin (or more to taste)
How to make gin and tonic cake
1. Preheat the oven to 170 degrees.
2. First, make the cake: separate the eggs, beat the egg whites and set that bowl aside. Grate the lemon peel and squeeze it out.
3. Mix baking soda, flour, and salt together.
4. Beat the egg yolks fluffy with sugar, vanilla sugar, and butter.
5. Mix in the yogurt, the rest of the lemon juice, and lemon zest. Quickly mix in the flour mixture. Then gently fold the whipped egg whites into the batter. Pour into a greased cake pan or brownie pan.
6. Bake for about 40 minutes until golden brown and cooked through.
7. In the meantime, make the gin and tonic syrup that you will drizzle over the cake later. Heat the lemon juice, sugar, and tonic in a pan. Once the sugar has dissolved, lower the heat. Add the lemon slices and let them simmer for a few minutes. The syrup will thicken slightly. Remove from heat and let cool.
8. Take the cake out of the oven and let it cool for a bit. Then poke holes in it with a knitting needle or thick skewer. Pour half of the syrup over the cake. Place the lemon slices on the cake. Cut the cake into cubes and pour the rest of the syrup over it just before serving.
