He is truly one of the most talented chefs in Australia. His restaurant Africola received the award for best restaurant in South Australia within a year of opening. Recently, the Africola cookbook was also released, featuring the best-kept recipes from the Africola kitchen, such as this romaine lettuce with green goddess dressing.

INGREDIENTS
½ avocado
2 tbsp mayonnaise
2 tbsp finely chopped chervil, plus 5 g whole leaves
1 tbsp finely chopped chives
1 small shallot, finely chopped
1 tbsp extra virgin olive oil
2 romaine, just the firm inner hearts
sea salt and freshly ground black pepper

How to make the romaine with green goddess dressing

  1. Blend or puree the avocado, mayonnaise, chervil, chives, shallot, 60 milliliters of water, and olive oil in a blender or with an immersion blender until smooth. Taste and season.
  2. Cut the heads lengthwise in half, place them on a plate, and drizzle with the dressing. Sprinkle the extra chervil leaves on top.
