This is how you make Aperol Spritz cookies

Aperol Spritz just for drinking? No way. You can also bake the most delicious moist cakes or pies (like Aperol cheesecake). What you can also bake with it are these cookies, dipped in Aperol Spritz glaze.
You can whip up the batter for these cookies in just three minutes. By adding a good amount of grated orange zest and dipping the cookies in a super simple boozy orange glaze, this twist on the Italian cocktail is truly a hit.
This is how you make the Aperol Spritz cookies
- Preheat the oven to 180 degrees.
- Mix the granulated sugar and orange zest in a bowl. Add the butter, vanilla extract, orange extract, and salt, and mix until you have a light-colored fluffy batter. Then add the egg and mix until everything is combined. Sift the flour into the batter and mix with the mixer until combined. Then knead it briefly by hand into a ball.
- Roll out the dough on a piece of baking paper to about 1 centimeter thick. Then use a star-shaped cookie cutter to cut out the cookies and place them on another piece of baking paper. Bake the cookies in the oven for 8 to 10 minutes until the tops are dry. Let the cookies cool.
- For the glaze, mix the powdered sugar with the Aperol in a small bowl. Once the cookies have cooled, dip the tops in the glaze. Let the glaze harden for about 15 minutes. If you want, you can also sprinkle some sprinkles on the cookies right after dipping.
