Ultimate comfort food: Buffalo Wings from the Airfryer

Buffalo wings with blue cheese sauce

Say wine, snacks or haute cuisine and the gourmands at online food magazine FavorFlav know where to drink, how to eat it and what to cook. This time our cheffies serve you: Ultimate comfort food: Buffalo Wings from the Airfryer.

Sometimes I think I would have been better off born in America, because I love their snacks. However, I prefer the Dutch snack culture, so a mix of both would actually be perfect. Onion rings, cheesecakes, mozzarella sticks… LOVE IT. But my ultimate favorite has to be the Buffalo Wings. And those nice and spicy of course. With blue cheese sauce. I really don't understand why I can't find them on any menu in the Netherlands (except at the Hard Rock Café). Too delicious. Luckily, it's very simple to make them yourself.

Ingredients

Chicken wings
Frank’s Hot Sauce
Tabasco
Worcestershire sauce
Baking powder
90g Blue cheese (for example Castello)
75g Sour Cream
65g Mayonnaise
1 clove of garlic
1 tsp lemon juice
Celery

You need to dry the chicken wings first with kitchen paper, so they are completely dry. Meanwhile, set the Airfryer to 180 degrees. Then put them with a spoonful of baking powder in a plastic bag (I find this the easiest) and let it sit for a bit. You can do it without baking powder, but then they become less crispy and I love crispy Buffalo Wings.

Then you come to the next point: into the Airfryer with them. Cook them for about 12 minutes at 180 degrees, then toss them around a bit and set for another 10 minutes at 200 degrees. In my experience, it varies per Airfryer how hard they go, so keep an eye on them.

The blue cheese sauce
And then you can make the blue cheese sauce in the meantime. Also so easy: throw the garlic, sour cream, mayonnaise, blue cheese, and lemon juice into a blender (or do it by hand if you feel like it) until it's smooth. DONE. Whuuut? So delicious and so easy. Serve it with some celery sticks to dip in.

When the chicken wings are ready, put them in a large bowl or dish. Then pour the hot sauce over them, the Tabasco, and Worcestershire sauce. If you don't like one of those last two; it can also be done without. Mix everything well together and there you have it: the (snack) eating can begin! Perhaps unnecessary to mention, but I would definitely have some kitchen paper ready, because eating these Buffalo Wings is very messy. And very spicy, so you have to like that. I'm going to make them again right away. TOO DELICIOUS.
