INGREDIENTS
1 leek
1 zucchini
200 g cherry tomatoes
150 g bacon bits
4 eggs
200 g crème fraîche
100 g grated Parmesan
4 tbsp green pesto
salt and pepper
4 carrot tortillas
How to make the Italian tortilla quiche
- Preheat the oven to 200 °C.
- Slice the leek into half rings and the zucchini into half moons. Halve the cherry tomatoes.
- Heat a frying pan without oil and fry the bacon bits in it. After 3 minutes, add the zucchini and leek. Cook until soft and tender.
- Meanwhile, whisk the eggs with the crème fraîche, Parmesan, and pesto. Season to taste with salt and pepper.
- Line the edges and bottom of a deep, round baking dish with the tortillas. Mix the bacon bits and vegetables into the egg mixture and spread it over the tortilla base.
- Distribute the cherry tomatoes over the filling of the quiche with the cut side facing up.
- Bake the quiche for 45 minutes, until the egg is set. It is delicious both warm and cold.
