The best scrambled eggs to make today

‘If you love shakshuka or huevos rancheros, this Turkish dish with soft scrambled eggs will become one of your new favorite dishes,’ writes Melissa Hemsley in her new cookbook Eat Happy. Worth a try, we think.
INGREDIENTS
1 tablespoon butter or ghee
1 small onion, finely chopped
1 red bell pepper, seeds removed, diced
1 handful of parsley, stems finely chopped and leaves roughly chopped
1 clove of garlic, finely chopped
½-1 teaspoon chili flakes (to taste), plus extra for serving
2 tomatoes, diced, or 100 g cherry tomatoes, quartered
4 eggs sea salt and black pepper
For serving: handful of feta, crumbled
extra virgin olive oil
Melissa: ‘Try to find Aleppo chili flakes – called pul biber in Turkey – for an authentic flavor. Serve with warm toast, heated chickpea wraps or buckwheat naan, and a handful of parsley leaves.’
Preparation
1. Melt the butter in a large frying pan and add onion, bell pepper, parsley stems, garlic, and chili flakes and let everything sauté gently over medium heat for 5 minutes. Stir occasionally.
2. Add the tomatoes to the pan, turn the heat up, and cook everything for 5 minutes.
3. Turn the heat down and push all the cooked vegetables to one side. Crack the eggs into the empty space in the pan and mix the yolks and whites for about 20 seconds with a wooden spoon. Add a little salt and pepper. Stir the vegetables very gently into the egg mixture for 1 minute until the egg is just cooked but still soft and somewhat runny. Remove the pan from the heat (remember that the eggs will continue to cook in the hot pan).
4. Sprinkle the scrambled eggs to taste with parsley and feta, drizzle with olive oil and some extra chili flakes, and serve immediately.
