How do you make a light and fluffy cheesecake with three ingredients? The Japanese vlogger Ochikeron shows how she makes her cheesecake from white chocolate, eggs, and cream cheese – and the internet explodes.

INGREDIENTS
3 eggs
120 grams of white chocolate
120 grams of cream cheese

This is how you make Japanese cheesecake

  1. Preheat the oven to 170 degrees.
  2. Separate the eggs. Whip the egg whites until stiff.
  3. Melt the white chocolate in a bain-marie. Mix in the cream cheese. Remove from heat and stir in the egg yolks.
  4. Now fold the whipped egg whites into the batter in three portions.
  5. Line a baking pan with parchment paper, which you have lightly greased with oil. Pour the airy batter into the baking pan. Tap it a few times on the countertop to release large air bubbles from the batter.
  6. Place the baking pan in a larger baking dish and fill it with hot water. Put it in the oven.
  7. Now comes Ochikeron's trick: the cake is baked at three different temperatures. First: 15 minutes at 170 degrees, then 15 minutes at 160 degrees, and then the oven is turned off and the cake remains in the warm oven for another quarter of an hour.
  8. Ochikeron lets the cake cool completely and dusts it with a little powdered sugar.
