Ingredients 

  • 8 slices of homemade or country white bread, crusts removed
  • 10-15 basil leaves, torn into pieces
  • extra virgin olive oil, for drizzling
  • 4 firm tomatoes, peeled and diced
  • salt and freshly ground black pepper

Panzanella, the salad based on slightly stale bread, tomatoes, and olive oil, is typical of the cuisine of Tuscany and the rest of Central Italy. This salad from the peasant kitchen is ready without having to cook anything, making it very suitable for summer and can be easily prepared; if you let it rest for a few hours, it becomes even tastier as the bread absorbs the tomato juice and oil. The flavor becomes even richer if you add raw onion rings and black olives.

How to make panzanella

  1. Tear the bread into pieces and let them soak in cold water for a few minutes; squeeze out the moisture and place them in a salad bowl.
  2. Sprinkle with some salt and pepper, scatter the basil over it, and drizzle generously with oil.
  3. Toss the pieces of bread with two forks so they crumble and add the diced tomatoes.
