Tip: falafel waffles are the tastiest

Mounir Toub is one of the most well-known chefs in our country. He regularly appears on TV shows, writes cookbooks, and is a hospitality teacher. His latest book is called Quick Arabic and in this book, Mounir shows you how to prepare the tastiest Arabic dishes in just 30 minutes. Like these savory falafel waffles with beetroot salad; just as delicious as a sweet waffle.

INGREDIENTS
For the falafel waffle
1 tbsp olive oil, plus extra for greasing
400 g cooked chickpeas
½ bunch of leaf parsley, washed and dried
¼ bunch of fresh coriander, washed and dried
1 red onion, cut into wedges
salt and freshly ground black pepper
zest and juice of 1 organic lemon
2 eggs
150 g self-raising flour
For the beetroot salad
500 g cooked beetroot, diced
1 red onion, in half rings
½ bunch of leaf parsley, washed, dried, and chopped
25 ml vinegar
25 ml extra virgin olive oil
salt and freshly ground
black pepper

Here's how to make the savory falafel waffles
- Weigh and measure everything accurately and set it up neatly. Preheat a waffle iron (see the tip below).
- Put the chickpeas without liquid (save the liquid, also known as aquafaba for another dish) with all the other ingredients for the waffles in a food processor and blend them finely in 3 minutes.
- Scoop a bit of the chickpea mixture into the waffle iron and bake all the falafel waffles this way. After baking, store them in a clean dry tea towel so they become a bit softer.
- Mix the beetroot with the onion, parsley, vinegar, and extra virgin olive oil and season with salt and pepper.
- Place a falafel waffle on a plate and scoop some of the beetroot salad on top. Cover with another falafel waffle and enjoy!
Tip: grease the waffle iron well with baking spray or a bit of oil, otherwise the waffles will stick.
