“My mother's apple pie is the best,” says everyone. That must be true, but does that apple pie also have Speculoos in it? No? What a shame! Because Speculoos and apple pie are a perfect match.

Ingredients

  • 250 g flour
  • 130 g sugar
  • 175 g soft butter
  • 4 tsp ground cinnamon
  • 2 eggs
  • 1 kg apples
  • 250 g Lotus Biscoff

Mmmm… Nothing is as nice as the smell of freshly baked apple pie throughout the house. This recipe for apple pie with Lotus Biscoff Speculoos cookies is super simple and easy to apply without changing your (grand)mother's apple pie recipe. The crumbled cookies provide an extra crunch and speculaas flavor; delicious with apple.

Here's how to make the apple pie with Speculoos

  1. Preheat the oven to 170 degrees.
  2. Knead the flour, 80 g sugar, the butter, 1 tsp cinnamon and 1.5 egg into a smooth dough.
  3. Roll out three-quarters of the dough and line a greased pie dish with it.
  4. Peel the apples and slice them. Sprinkle with 3 tsp cinnamon, 50 g sugar, and the crumbled Speculoos (adjust the amount to your taste).
  5. Fill the pie dish with the apples.
  6. Roll out the remaining dough, cut it into strips, and cover the apples in a lattice pattern.
  7. Beat the last egg and brush it over the dough.
  8. Bake the pie for 60 to 65 minutes in the oven.
