Hangover recipe: the waffle toast

We already made it recently banana bread waffles, now we have a nice recipe for the cheese lovers among us: a waffle toastie.
INGREDIENTS
1 tbsp mayonnaise
1 tbsp unsalted butter at room temperature
4 slices of sourdough bread
2 slices of good melting cheese (e.g. Gouda)
75 g grated Monterey Jack cheese (if your cheesemonger doesn't have that, you can also just use cheddar, then make it 150 grams)
75 g grated cheddar
250 gr flour
In principle, a waffle iron and a toastie maker are not much different from each other, except for the shape and depth of the plates. And it is precisely those that ensure you get plenty of those delicious crispy cheese bits on the outside and such soft cheese on the inside that you can make the most beautiful ‘cheese bridge’. Here's how to make the waffle toastie:
- Mix the mayonnaise and butter in a small bowl.
- Spread one side of the slices of bread with the mayo-butter mix.
- Flip the slices over (the spread side is now on the bottom) and top them with the cheeses.
- First the Gouda, then the Monterey Jack, and then the cheddar.
- Place the other slice of bread on top, with the mayo-butter side up.
- Heat your waffle iron to medium hot and grease it with baking spray.
- Place your toastie in it, close the iron, and bake it for about three minutes until the cheese is melted and the bread is golden brown. Enjoy your meal!
