A cocktail as a dressing for your salad is not new. Last year we brightened up our summer salads with a Italian Spritz dressing. Do you love olives like I do? Then this dressing will absolutely delight you, because fellow food lover Emily Ziemski is generous with olive juice in this dressing.

Ideal reward for weekdays
Emily: ‘I use this dressing to reward myself during the week. For those moments when I want to make my dinner just a little bit tastier. The olive juice (from a jar of olives in water) is the star of the dressing, complemented by a nice tangy mustard and spicy gin. These big, bold flavors together are a dream for any salad or vegetable.

Here's how to make the Dirty Martini salad dressing

  • In a small food processor (or mortar), combine the liquid from a jar of olives, mustard, and garlic.
  • Pulse briefly and then gradually add the olive oil.
  • Add the gin, rosemary, coriander, and salt.
  • Continue mixing until fully combined.
  • Add salt and pepper to taste and serve over your favorite vegetables or salads.
  • You can store the dressing for up to two weeks, just remember to mix it well before use.

Tip: no food processor or mortar at home? Then you can also just chop all the ingredients very small, throw them in a jar, and shake very hard!
