The hotspot in Amsterdam where vegetarians feel like they are in seventh heaven

Lately, I've been trying to be a bit more conscious of what I eat, in other words: I'm going to eat a little less meat. I don't eat fish anyway, but I'm becoming a bit more oriented in vegetarian cuisine. Interestingly, I find it not so difficult at home, but when I go out to eat, it becomes much harder for me. Often it comes down to, for example, a pasta or a cauliflower steak. However, I recently ate somewhere where the food was really bizarrely delicious, and I didn't think for a second about the lack of or missing meat.

Vegetarian dining at fine dining level: it is possible and you can do it at GREEN Gastrobar on the Zuidas in Amsterdam. Here, Peter Lute reigns, whom I already knew from De Kruidfabriek by LUTE in the most beautiful village in the Netherlands; Ouderkerk aan de Amstel (yes, that's indeed where I'm from, so I'm not entirely objective). By the way, that's also a recommendation, because you can eat incredibly well there too.

GREEN Gastrobar is open every week from Wednesday to Saturday for lunch and dinner and has a beautiful view: you sit incredibly high and can see all of Amsterdam. I actually didn't notice much of that, because I was mainly focused on the food — every dish was a true work of art.

My ultimate highlight of this dinner was perhaps the truffle potato mousseline. Seriously, I could eat that every day and never get tired of it. Addictively delicious. But also the celeriac with peanut dressing is finger-licking good and the dessert with pineapple... Delicious.

You can also order all dishes à la carte, but I would definitely recommend the menu. All dishes are so well put together, you seriously don't want to miss anything.

And if you still have the urge for fish and/or meat, that option is available, because you can supplement your menu with various options.
