Dinner recipes: you can do these in under 20 minutes

Yes, you know how it is: you've already had a whole workday. After a return trip that seemed to last for ages, you finally flop down on the couch. Actually, you'd prefer to watch Notting Hill under a blanket for the hundredth time, but then suddenly a question burns in the back of your mind: “What are we eating tonight?” Maybe you've already received messages from your partner, who didn't have time to cook, or you live alone – either way, that question needs to be answered every evening. And you really don't feel like spending an hour in the kitchen: you want something simple. Then you're in the right place, because here are 7 dishes for two people that you can whip up in just 20 minutes.

1. Poké Bowl

Let's keep it simple: a Poké bowl with salmon. Nice and cold, nutritious, and it feels just like you've ordered sushi.

Ingredients:

  • For the salmon: 200 grams of salmon fillet, 1 tablespoon of soy sauce, 1 teaspoon of sesame oil, 1 tablespoon of sesame seeds.
  • For the poké bowl: 250 grams of cooked sushi rice, 1 teaspoon of rice vinegar, a pinch of sugar, 1 cucumber, sliced carrot, 100 grams of frozen edamame beans, and 275 grams of fresh mango pieces.
  • For the sauce: two tablespoons of Kewpie Japanese mayo, 1 teaspoon of chili sauce.

How do you do that? First, cut the salmon fillet into cubes of 1 by 1 centimeter. Or buy pre-cut. Put the salmon in a bowl with the soy sauce, sesame oil, and sesame seeds. Cover it with plastic wrap and put it in the fridge while you assemble the bowl. Use pre-cooked rice, or cook the sushi rice. Drain and mix the slightly cooled rice with the rice vinegar, pepper, salt, and sugar. Then you go ahead and cut all the vegetables, cook the edamame beans according to instructions for a few minutes, then rinse with cold water. Cut your cucumber into strips, and then you can start serving, because you eat that salmon raw. Divide the sushi rice over your plate (preferably a deep soup bowl), and place the salmon and vegetables next to it. Mix the Japanese mayo and chili sauce in a small bowl, and drizzle this sauce over the final result. Sprinkle some sesame seeds on top, and you've just made a poké bowl like from a restaurant. 2. Tuna Pasta Salad

There's almost nothing easier than a tuna pasta salad. If I need a quick and tasty recipe, I go for this one, because it never disappoints me.

Ingredients:

  • 1 can of tuna in oil (2 if you want extra), 1 small bag of arugula +/- 75 grams, 1 red onion, 40 grams of pine nuts, 200 grams of penne, pepper, salt, olive oil.

It can't get simpler: you cook the pasta. Meanwhile, while it cooks, drain 1 can of tuna and put it in a bowl. Then chop 1 red onion and add it to the tuna. Add pepper, salt, and arugula. Toast the pine nuts briefly in a small pan and add them once they are golden brown. For the dressing, you don't need to use eighty sauces. Just sprinkle some pepper, salt, and olive oil on it. For some freshness, you can also add the juice of half a lemon. Drain the pasta and immediately run it under cold water: this cools the pasta in one second. Once it's cold, add it to the large bowl and mix everything together. And your salad is ready. Do you prefer a bit more lettuce than arugula? Then go for a bag of mixed salad.

3. Creamy Pepper Chicken

Now that it's getting colder, you want comfort food. Unfortunately, many of these recipes take hours: braised beef needs to cook for a long time, and a stew wants to simmer as long as possible. Do you still want such a nice steaming meal? Then this creamy pepper chicken is something for you. For the chicken: two chicken thighs (+/- 300 to 400 grams) 2 tablespoons of olive oil, 1 teaspoon of tomato paste, half a teaspoon of pepper, half a teaspoon of salt, 1 teaspoon of garlic powder, 1 teaspoon of paprika powder, half a teaspoon of cayenne powder.

Ingredients:

  • two teaspoons of butter, 50 ml of cooking cream, 50 grams of Parmesan cheese, half a teaspoon of salt, and half a teaspoon of pepper. Extra: 150 grams of rice.
  • For the sauce: You start by marinating the chicken. Here you throw everything in: the olive oil, spices, and tomato paste. Once everything is well mixed, cook on medium to low heat until the chicken is well done in the pan. When it's halfway done, you start cooking the rice. Once the chicken is ready, melt the butter in the same pan. Here you add all the same spices you used earlier for the chicken. Cook this for thirty seconds. Then add the cooking cream. When the sauce has a nice red color, add some Parmesan cheese. This creates a creamy sauce. Drain the rice, and voilà: you've got super tasty chicken with rice in no time. Easy peasy. Want more vegetables? Then stir-fry some broccoli or just a pre-cut bag of Asian stir-fry vegetables. That's just as easy.

Yes, pasta is just cultural heritage: it's always good. And cooking that pasta only takes about ten minutes, so it's on the table in no time. But you don't have to use a ready-made sauce to be quick, you just do it very simply like this.

8 cloves of garlic, 4 tablespoons of olive oil, 250 grams of cherry tomatoes, 1 half lemon, 1 glass of white wine, 100 grams of cold butter, 250 grams of spaghetti or linguine.

First, start by chopping all the garlic cloves. This can be in strips or small pieces; whatever you like. After you've warmed the olive oil, sauté the garlic. While it cooks, cut the cherry tomatoes in half. This is the moment to put your pasta on, because it still needs to cook. Once the tomatoes are chopped, add them to the sautéing garlic with a pinch of salt. Cook them until the tomatoes are soft, that's when you start to crush them. This makes them even softer and you get the beginning of a nice sauce. Let it simmer until your mixture starts to look more like a thick sauce. Grate some lemon zest before you deglaze with white wine. Turn off the heat and finally add some cold butter. Stir this into the sauce to get a nice sauce. Add a ladle of pasta water and the al dente pasta. For flavor, add some fresh basil, and there you have it: a delicious pasta that you can enjoy on the couch. 5. Crispy Chicken Caesar Wrap:

400 ml mayonnaise, 2 tablespoons Dijon mustard, 2 tablespoons Worcestershire sauce, salt to taste, 2 teaspoons black pepper, 2 tablespoons lemon juice, 4 cloves of pressed garlic, 2 tablespoons extra virgin olive oil, 160 grams of grated Parmesan cheese, and 3 to 4 tablespoons of water.

: 240 grams of romaine lettuce, 320 grams of bacon strips, 100 grams of grated Parmesan cheese, 100 grams of croutons, and the dressing. these tips For assembling: large tortilla wraps.

  • Marinate your chicken with the olive oil, pepper, salt, smoked paprika powder, and garlic powder. Set this aside while you work on your bacon. Place them on your baking sheet with some parchment paper and roast them for about 10 minutes in the oven or in the pan without oil. While they roast, slice 1 red onion and add salt and white wine vinegar. Scrunch this so the flavors mix well. In another bowl, mix the crème fraîche, mayonnaise, spices, lime juice, and olive oil for the salad dressing. Cut the green onions into rings and add them, along with the red onion, to the dressing. Meanwhile, the corn should be ready, so take it out of the oven/pan. Cut the corn off the cobs and add this to the dressing as well. Chop the fresh herbs and add them to the salad. Start by cutting your chicken into cubes. Then cut one whole broccoli into thin florets. Cook the chicken in a wok over high heat with the soy sauce, rice vinegar, garlic, pepper, and salt. When it's golden brown, cook the broccoli in the same pan with some olive oil. Once it's slightly browned, remove it from the pan. Now put the noodles on. Add the avocado oil, peanut butter, soy sauce, oyster sauce, sesame oil, and chicken broth (again) to the same pan. This saves a lot of washing up, this recipe.
