After a day full of hustle, running from place to place and an overflowing agenda, you really don’t feel like spending hours in the kitchen. We understand that. You want to whip up something delicious that isn’t just a quick bite, but doesn’t take hours either. Because while we all sometimes crave a quick meal, you also don’t want to settle for a boring, quickly made meal every day. Luckily, I have something for you! This week: carbonara cheese fondue with purple broccoli

Do you want something super healthy? Then this is your cue to turn around and run away fast. Because healthy? We’re not doing that today. It’s cold, wet, and dark. That means we’re in the mood for something comforting and especially tasty. Searching for a healthy recipe every evening can get boring… so we need to come up with something else. And what do you do at this time of year? Exactly: fondue. And not the old-fashioned, simple one like you do every year, but a little different. With carbonara cheese and purple broccoli. What’s the best part? You can make this very easily yourself.

The shopping list (for 4 people)

  • 50 grams of guanciale cubes
  • 200 grams of Swiss cheese fondue
  • 100 ml dry white wine
  • 25 grams of Parmesan cheese
  • Various types of baguettes
  • 2 purple mini cauliflowers
  • 1 ‘regular’ cauliflower
  • 1 bag of broccoli florets
  • 2 winter carrots
  • 50 grams of farfalle
  • Skewers

This may all sound a bit weird, but trust me: this is delicious. And isn’t it nice to eat something different than that familiar cheese fondue? Just pay attention.

The preparation

Step 1: Roast the vegetables

To make it as easy as possible for yourself, you’re going to roast all the vegetables in the oven. Preheat the oven to 190 degrees. Then cut the cauliflower into quarters and the carrot into slices. Don’t have pre-cut broccoli? Then separate the florets from the stem. Spread these on a baking sheet lined with parchment paper and drizzle with some olive oil. Roast them for twenty minutes in the oven.

Step 2: Cook the pasta and fry the guanciale

Yes, a carbonara cheese fondue requires pasta. Cook it according to the instructions on the package until al dente. While the pasta is cooking, you’re going to fry the guanciale. We do this because this is the meat in a carbonara pasta. Fry it for four to five minutes until golden brown and crispy without oil in a frying pan. Is it crispy enough? Then let it drain on paper towels. Then chop the cubes into fine crumbs.

Meanwhile, the pasta should be cooked, so drain it, let it drain well, and pat it dry. Then thread the farfalle onto skewers so you can dip them in the cheese.

Step 3: The star of the show: the cheese

Prepare the cheese fondue with the wine in a fondue pot according to the instructions on the package. Grate the Parmesan cheese and stir it into the fondue as soon as everything has melted. Mix it together and meanwhile take the vegetables out of the oven. Put these in various fun bowls.

And here comes the moment supreme: we’re going to take the cheese fondue off the heat and put it on the table. Because it has melted enough. We don’t want cooked cheese, right? Do you want the fondue to be even more liquid? Then you can add some extra wine.

Step 4: serving

Place the large pot of cheese fondue in the center of the table. Surround it with bowls of all the vegetables, carbonara crumbs, and farfalle. Do you have a lot of guanciale crumbs? Then it’s best to spread a few bowls around the table. This way, everyone can dip their toppings in the cheese and then sprinkle with the meat. This way you have a real carbonara cheese fondue.

There it is. The ultimate comfort food that you want in December. Even if it’s not very healthy… you really deserve to treat yourself once in a while. That’s allowed from us.
