After a hectic day, running from place to place and a packed diary, you really don't feel like spending hours in the kitchen. We understand that. You want to conjure up something tasty that is not just a quick snack, but does not have to take hours. Because while we all crave a quick meal from time to time, you don't want to settle for a boring, quickly made meal every day either. Luckily, I have something for you! In the section Easy recipes of the week Every Monday, we search for the fastest, easiest, and tastiest recipes that you can put on the table in no time. This week: the healthy broccoli bowl.

Am I the only one who finds it a bit tricky to eat healthily with my busy schedule? It’s so tempting to just throw a frozen pizza in the oven when you get home at eight in the evening – but that’s exactly what you shouldn’t do. Of course, it’s not like you lose all your progress with one slip-up, but it’s better to choose something healthy. Because yes, as soon as you fall back into those old habits of grabbing a quick bite at the Smulders at the station, you’re back to square one. We’re going to prevent this together with recipes that are simply good for you, like this quick broccoli bowl that’s so delicious you’ll devour it in five minutes.

The shopping list (for 2 to 3 bowls)

For the bowl

  • 200 grams jasmine rice
  • 400 grams minced meat
  • 200 grams broccoli florets
  • 2 cloves of garlic

The preparation

Step 1: cook the rice and broccoli

Although you will eventually fry everything in one pan, you first need to cook the rice and broccoli before you can combine everything. So that’s what you’re going to do first: cook the rice according to the instructions on the package. Cut off the stems of the broccoli florets and cook them at the same time (or separately if you only want to use one pan) for six to eight minutes. Once they are both ready, drain them and keep them separate in two containers. Then chop the broccoli into rough, smaller pieces. Do you have leftover rice? Then it’s actually nice to use it; it makes your dish a bit crispier and stickier.

Step 2: let everything fry together

You really don’t need to be a chef for this recipe, because from now on it gets very easy. Put a large pan on the heat and start browning your minced meat until it starts to color. Meanwhile, crush your garlic cloves and sauté them. When you see that brown color, add the broccoli and rice.

Step 3: make the sauce

Before you mix the ingredients together, scoop everything for the sauce on top. It can’t get any easier, right? Add the gochujang chili paste, soy sauce, and spicy honey. Mix this and fry it for five minutes so that the sauce thickens a bit. And you know what I find the best? By frying this, the rice becomes extra crispy.

Step 4: serve and done

Scoop the rice mix into a deep plate and sprinkle some sesame seeds on top to finish it off.

It takes you a little twenty minutes, but then you also have a healthy and delicious comforting meal on the table. This is also really a recipe that you can meal prep well; cook the rice and broccoli a day in advance so that in the evening you only have to put everything together. That’s really nice after such a chaotic day, right? That you don’t have to put together a three-course meal, but just sit on the couch with your broccoli-minced bowl after ten minutes?
