Easy recipes of the week: Jennifer Aniston's salad

“What are we eating today?” It is probably the most frequently asked question in the world. After a hectic day, running from place to place and a packed diary, you really don't feel like spending hours in the kitchen. We understand that. You want to conjure up something tasty that is not just a quick snack, but does not have to take hours. Because while we all crave a quick meal from time to time, you don't want to settle for a boring, quickly made meal every day either. Luckily, I have something for you! In the section Easy recipes of the week every Monday we search for the fastest, easiest, and tastiest recipes that you can put on the table in no time. This week: Jennifer Aniston’s ‘buchered cobb’ salad.
Have you been surviving on Christmas leftovers for two days? Then you really have to face it… They are gone. After eating Ross’ Thanksgiving sandwich (you know, with that leftover meat, gravy, and cranberry sauce), all those leftovers are gone and you need to start cooking again. It’s not a new year yet, but ‘normal’ life has started again. After all those elaborate Christmas dinners, this recipe is perfect for these days: when you don’t feel like doing much, but still want to eat healthy. And yes, Jennifer ate this recipe religiously on the set of Friends. So that means we have to try it, right?
Shopping list (3 people)
For the salad
- Large bag of pre-cut iceberg lettuce
- 2 large beef tomatoes
- Two handfuls of chickpeas
- Salami
- Crunchy Marhaba turkey bacon
- Smoked\/pre-cooked chicken
- Grated Pecorino Romano cheese
For the dressing
- 4 tablespoons extra virgin olive oil
- 2 tablespoons of white wine vinegar
- 2 tablespoons lemon juice
- 2 teaspoons honey
- 1 clove of garlic chopped into small pieces or pressed
- 1 teaspoon Dijon mustard
- Pinch of pepper and salt to taste
Step 1: prep the vegetables
Jennifer’s salad is definitely not difficult, so you can make it yourself. Grab a bag of shredded iceberg lettuce and put it in a large bowl. Cut the tomatoes into small cubes and add them.
Step 2: the meat
You will chop the salami and smoked chicken into small pieces. You can also warm the chicken in the pan, but it’s already pre-cooked, so that’s not necessary. What you will fry is the turkey bacon. The one in Jennifer’s salad is crunchy, so you want that too. Cut it into small pieces and fry them with a small lump of butter. Once they are brown and crunchy, they are ready to go into your salad. Add these, along with the salami and chicken pieces.
Step 3: the ‘garbanzo beans’ or as you know them: chickpeas
Well, Jen calls them garbanzo beans, but that’s just a fancy word for chickpeas. You can add them cold to this salad or warm them up in their own juice. Whether you heat them or not, you need to let them drain well. Do you want to roast them in the oven? That’s possible too. Oh, and don’t use too many, because you can get a stomach ache from those peas – according to our Rachel Green.
Step 4: grate the cheese
Cheese is something you can use as much as your heart desires, but if you want to follow this recipe, grate a large handful. After grating, add this to your salad in the bowl.
Step 5: the dressing
Finally, we are going to make a Italian dressing This is actually a very simple dressing made from lemon juice, white wine vinegar, Dijon mustard, garlic, honey, extra virgin olive oil, pepper, and salt. If there’s anything easy, it’s this dressing.
Grab a measuring cup and mix all the ingredients together. To make the best dressing, you’re going to create an emulsion with the white wine vinegar and olive oil like a real chef. How do you do that? You start with the vinegar. To mix the vinegar well, you then add the mustard. That’s the emulsifier (or the ‘glue’) for your mixture. Then grab a whisk and whip this up quickly. Slowly add your olive oil. Once everything is well mixed, add the rest of the ingredients and your dressing is ready. Pour this over your salad and mix it all well together.
It takes you a quarter of an hour, but then you have a fantastic meal salad on the table. And yes, if Jennifer Aniston swears by it, it must be good.
