“What are we eating today?” It is probably the most frequently asked question in the world. After a hectic day, running from place to place and a packed diary, you really don't feel like spending hours in the kitchen. We understand that. You want to conjure up something tasty that is not just a quick snack, but does not have to take hours. Because while we all crave a quick meal from time to time, you don't want to settle for a boring, quickly made meal every day either. Luckily, I have something for you! In the section Easy recipes of the week Every Monday, we search for the fastest, easiest, and tastiest recipes that you can put on the table in no time. This week: crispy sushi tacos.

Wait a minute. Sushi tacos? Sorry, what? Yes, that was exactly my reaction. Because when I think of sushi, I see myself sitting: on the couch, in sweatpants, with a way too large platter of salmon nigiri and soy sauce in my hair. And tacos? That’s more of a Friday night with guac, ground meat, and a margarita on the side.

Okay, we have established that these are totally different worlds. But yes, TikTok wouldn’t be TikTok if they didn’t just mix it all up. With this trend, you don’t get cold rice in a hard yellow shell (thankfully). No, this is a brilliant crossover with a crispy nori sheet as the shell. Perfect if you don’t feel like rolling that sushi. All you need is an air fryer, rice, salmon, and voilá: the sushi taco is born.

The shopping list (for 2 people, so 8 tacos):

  • 1 pack of sushi nori sheets
  • +/- 400 grams (sushi) rice
  • 2 avocados
  • 1 cucumber
  • 280 grams salmon fillet (2 pieces)

For the marinated (if you want baked salmon):

  • Soy sauce
  • Teriyaki sauce
  • 1 clove of garlic

For the topping:

  • a splash of Kewpie mayo (or mayo and sriracha)
  • a splash of soy sauce
  • 1 spring onion

The preparation

Step 1: Cook the rice

We start by cooking the rice. Ideally, you use sushi rice, as it is specifically meant for sushi. It is shorter and thicker than regular rice and contains more starch, making the rice nice and sticky. Therefore, it is important to (yes, really) wash the rice first before using it, otherwise, your sushi will go wrong. Take a colander and place it under the tap in the sink. You need to wash the rice until the water is no longer cloudy. Once it’s washed, cook it according to the instructions on the package. Do you insist on using ‘regular‘ white rice? That’s possible, but sushi rice really works better.

Step 2: Marinate the salmon

Not a fan of raw salmon? Then you can bake the salmon in the oven. Cut the salmon into pieces and place them in a bowl. Mix the pressed garlic, 1 tablespoon of soy sauce, and 1 tablespoon of teriyaki sauce with the salmon and let it marinate for a bit. Do you like raw salmon? Then you can skip this step.

Step 3: Cutting the taco shells

To get the taco shape, you need to cut the nori sheets. You do this while the rice is cooking (and the salmon is marinating). First, fold the sheets in half. Once they are folded, cut them into a round shape. Just trim the corners, and there you have a round nori sheet.

Step 4: Making the ‘taco’ shells

Once the rice has cooled down, you will make the shells. Scoop two tablespoons of cooked rice onto your nori sheet. Spread this in a thin layer and flatten it with your spoon. Once you have an even surface, it’s time to air fry. This will be a folding art. Place an oven-safe dish in the middle of the air fryer. Fold the rice-covered nori sheets in half to form taco shells and place them next to the dish. The edge of the air fryer and the dish will help the sheets hold their shape, giving you those crispy shells.

Want to bake more sushi tacos at once? Then remove the dish and place as many as fit next to each other. This may cause them to collapse or lose their ‘taco’ shape. Bake them for 15 minutes at 180°C.

Step 5: Bake the salmon

Reminder: do you want raw salmon? Then you can skip this step. You will need the oven for this. Place the marinated salmon on a baking paper and bake in the convection oven at 210°C for 17 minutes. Meanwhile, bake the sushi shells in the air fryer and start cutting the vegetables.

Step 6: Prep the vegetables

Yes, those tacos need to be filled, of course. So the moment has come to prepare them. Cut the avocado into thin slices, the cucumber into thin strips, and the spring onion into rings. Do you want to add more? That’s possible. Actually, anything you like can go in. Replace the salmon with crispy chicken, make a variant with crab, slice red bell pepper – name it, and it can go in. So just do what you like.

Are you done before the salmon? Then this is your chance to pour yourself a glass of wine or just flop on the couch.

Step 7: Fill the tacos

When the nori sheets are nice and crispy and the salmon is cooked (and cooled, don’t forget), comes the best moment of your cooking adventure: building your ultimate sushi taco. Just pay attention, because there’s a whole strategy behind it: start with the cucumber strips. On top of that, add the avocado. Then comes the salmon (raw, baked, or an alternative). Top it off with a sauce of your choice like kewpie mayo and soy sauce. Don’t have kewpie mayo? Then mix mayonnaise with sriracha: a tip from us. Sprinkle with spring onion and sesame seeds for garnish, and they’re ready.

It may not be the most traditional sushi experience, but believe me, you won’t quickly go back to that takeout meal in your pajamas. Instead of ordering sushi, you can just make this yourself in a little half hour. And the best part? You can assemble it however you want for less money, because this is definitely cheaper than such a box for €30. So say goodbye to those delivery people, because you are now the sushi master in your own home.
