This is how to make a pumpkin spiced latte

(with a nice little figure in it)

If autumn were a drink, it would be a pumpkin spiced latte. Yes, that spicy pumpkin drink that almost every girl in town would kill for when autumn begins. In September, the question already starts: “Where is the pumpkin spiced latte?” Well, PSL cult members, you can breathe a sigh of relief: that drink is almost everywhere available, whether you want it hot or iced. I'm already craving it again, but yeah, do you feel like paying almost six euros for it every morning? I don’t. So that means one thing: we’re going to learn how to make it ourselves. And us? We’ll take you along in our learning process, because this is exactly how you make one yourself with (yes, since we’re at it) such a nice little figure in the frothed milk. You know, that little heart that makes every barista suddenly look attractive.

Iced pumpkin spiced latte from scratch

Do you want to make your latte completely from start to finish? You can. If you have to make it yourself, you want it to be just as delicious as at your favorite café. And trust me: it’s really not difficult.

1. Make your own syrup
A latte is made with syrups, so yes, you can just make that yourself. Now, the thing is that almost every recipe is American and you need to use pumpkin puree. What’s the problem with that? Well, we (almost) don’t have that in the Netherlands. So you need to use something else; there are some products that come close; for example pumpkin passata or (no kidding) a  pumpkin vegetable snack. That sounds a bit weird, but it’s something that comes closest. Or well, there is something that resembles the thick American puree more… Pumpkin puree pie filling, but whether that really works well for your latte is the question. Scoop 120 grams of pumpkin puree into a heat-resistant bowl. Add 180 ml of water, 150 ml of maple syrup, 3 teaspoons of pumpkin spice, 2 teaspoons of vanilla extract, and a pinch of salt. Mix it well and place the bowl over a pan of boiling water. You’re going to let the syrup thicken nicely, just like how you melt chocolate au bain-marie.

2. Strain the syrup
Strain the syrup using a funnel. Let it cool down a bit and start on the rest of your coffee.

3. Finish the coffee
Grab a large glass and fill it to the top with ice cubes. Pour in as much syrup as you like. Add a shot of espresso (or more for the real coffee drinkers) and frothed milk, and you’re done.

Warm pumpkin spiced latte from scratch

Do you get chills just thinking about drinking such an iced coffee? Then you better make a warm version. Then you have something to warm up with in this cold weather. Remember that for next week when the temperatures drop.

Option 1: make the same syrup and add it

You can of course just make the same syrup as for an iced latte. The only difference is that you don’t use ice cubes. Brew an espresso and pour in as much syrup as your heart desires. Fill the rest of the glass with frothed milk. Sprinkle some pumpkin spice over it and there’s your warm pumpkin drink.

Option 2: make it with fresh pumpkin

Do you want to go for the full pumpkin experience? Then you can also make your warm latte with fresh pumpkin. Scoop +/- 1 tablespoon of pumpkin puree into a mug. Sprinkle two teaspoons of pumpkin spice over it. Then pour your warm, frothed milk over it. Finish it off with two shots of espresso. Want that café feeling? Top it with some whipped cream.

It can also be simple: use a ready-made syrup

Yes, you heard it right. Do you really not feel like searching every wholesaler for pumpkin puree? Or just don’t have the energy to make such a jar of syrup yourself? Then just buy one? Nowadays you can buy it straight from a bottle. You don’t have to stand in the kitchen for that at all.

Pour the syrup over your ice cubes in your cup, or in the mug before you brew hot coffee. Then just make your latte as usual: with a shot of espresso and frothed milk. Sprinkle some fresh pumpkin spice over it and stir it all together. I can assure you: this is also very delicious.

Little bonus: this is how you make a nice figure in your milk

Barista trick that anyone can learn, even if your artistic skills are about equal to those of a three-year-old:

  1. Froth your milk creamy (no bubbles!).
  2. Pour slowly in a circle.
  3. When you’re almost done pouring, lower the pitcher a bit closer to the surface. Tilt your mug slightly downwards.
  4. This is the moment supreme: pour the milk slowly into the cup for a shape. Keep it super still for a heart. Keep pouring until the circle is so big that there’s almost no brown coffee left on the sides. Draw a line through the middle and tadaa: a coffee heart. Want leaves instead of a heart? Then don’t keep the pitcher still, but move it gently back and forth.
