Healthy breakfast: organic banana-blueberry pancakes

I'm really into it again. Healthy breakfast. Not just for me, but for the whole family. Everyone really loves this. In fact, these pancakes are so incredibly delicious. So for now, not a sad little bowl of yogurt that is forgotten after ten minutes, but a breakfast that feels like comfort food and is still nutritious. Enter: the tastiest banana-blueberry pancakes. Soft, lightly sweet, and made with exactly four ingredients. Sometimes a good breakfast really doesn't need more.
The ingredients for this healthy pancake (nothing more, really)
- 2 organic eggs
- organic oats
- 1 organic banana
- organic blueberries (from the freezer)
Here's how to make this healthy breakfast
Mash the banana in a bowl (the riper, the better). I have a mixer myself, really the best one by the way from Ninja. Beat the eggs into it and then mix in the oats until you have a thick, pourable batter.
Finally, fold in the frozen blueberries (make sure to keep them whole), you don't need to thaw them, they'll be fine in the pan.
Heat a frying pan with a little good olive oil (or butter) and fry small pancakes over medium heat. Not too long, not too short. Just keep an eye on whether you can already flip it.
Why frozen blueberries are so healthy
Frozen blueberries may have a somewhat dusty image, but that's really unjustified. Because they are often much healthier than fresh blueberries. They are harvested at the moment they are perfectly ripe, and thus full of vitamins and antioxidants, and then immediately frozen. This helps preserve nutrients better.
Fresh blueberries often take a long journey before they end up in the supermarket. During that time, nutritional value can be lost. Frozen blueberries, on the other hand, are always available, do not spoil, and make it easier to eat fruit more often – which makes this breakfast with banana and blueberries extra healthy.
