Leftover oliebollen? Then you can eat them like this too.

Do you still have those fried dough balls left after a super long day and ten oliebollen? Then I understand that you are at your wit's end. It's a shame to throw them away, but eating an oliebol again – six hours after the last one – for breakfast is a bit... overenthusiastic. That's why it's handy to take a look at your options: is there anything else you can do with those oliebollen, other than eating them straight from your hand? Certainly. And we have gathered those easy recipes for you. Because it's understandable if you don't feel like spending two hours on those leftovers.
1. Olieboltosti
Are you secretly still hungover from yesterday's party? Or do you just not feel like going all out this Friday afternoon? Then I know what you can eat. A meal salad for lunch can wait until next week, now you probably want something easy. Something savory, maybe... a toastie? Yes, and you can actually make a really delicious toastie from oliebollen. This is just a currant bun with cheese, but then next level.
Cut your oliebol in half and put a slice of cheese in between. Let your toastie maker heat up and toast your olieboltosti in it as soon as it's ready. Press the iron really well shut, so you get a crispy toastie. Is the cheese melted? Then it's done. This is really the best of both worlds: sweet and salty. What more do you want on January 2nd?

2. oliebolwentelteefjes
Look, I never say no to French toast – and certainly not when it's oliebolwentelteefjes. This is really the ideal breakfast when you wake up on a Friday morning. It's easy and delicious. Add some whipped cream, fresh fruit, or just nothing (that works too) on top, serve it on a nice plate, and your family will think you really put in a lot of effort.
Mix +/- 1 egg, milk, and cinnamon in a bowl. Then cut your oliebol into large slices and dip them in the mixture. Let them soak well until they start to soften. Fry them in (cream) butter until they are golden brown, and then you have the tastiest French toast ever.

3. Oliebolbrood
This is a favorite at chef Miljuschka Witzenhausen's home, and I understand why. I want this dessert. Bread made from oliebollen is like a stollen, but better. Spread some butter on it, drink a cup of tea alongside it, and enjoy a new beginning of the year. Is that difficult? Well, normally it's very hard to make bread, but this one is really easy.
You need for 8 servings: 6 oliebollen, 400 ml milk, 3 tablespoons custard powder, 100 grams sugar, 80 grams raisins, 2 eggs, 1 red apple, 2 teaspoons cinnamon powder, and a lump of butter.
Start by preheating your oven to 180 degrees. Peel your apple and cut it in half. Remove the core and slice the apple into 0.5 centimeter slices. Mix the sugar and eggs in a bowl with a whisk and beat until the eggs are loose. Add the custard and cinnamon powder while continuing to whisk. Then pour in the milk and whisk it all together again. Cut the oliebollen into 1 centimeter slices and let them soak in the egg mixture for 5 minutes. Grease a cake tin with butter and layer it with a layer of oliebol slices. Press them down well and then make a new layer of apple slices. Continue with a layer of oliebol slices and repeat this process until everything is used up. Make sure to end with a layer of oliebol. Pour the rest of the egg mixture into the cake tin and let it bake for 60 to 75 minutes. Let it cool completely before freeing it from the cake tin and enjoy.

4. Oliebolcrackers
It's quite logical that you don't think of a crunchy cracker when you still have six oliebollen on the plate, but that's going to change. You can make delicious crackers from oliebollen, trust me.
Preheat the oven to 150 degrees. Cut your oliebollen into the thinnest slices possible and place them on a baking sheet lined with parchment paper. Drizzle some olive oil over them and let them stay in the oven until they are completely dried out. These hard, sweet crackers are delicious to eat with cheese. Do you have some brie left? Spread that on such a cracker. Or the old cheese that was left over from the Christmas breakfast also goes very well with this.
5. Oliebol muffins
Just like with oliebolbrood, you can really make a delicious bake from oliebollen. Forget cake, French toast, or bread: you can make oliebol muffins. Yes, seriously. And this is so easy that you can do it together with any child (or immature partner).
You need for 13 muffins: 6 oliebollen, 2 eggs, 180 ml milk, 70 grams sugar, 100 ml whipped cream, and 1 teaspoon cinnamon.
Start by preheating your oven to 180 degrees. Mix all the ingredients, except for the oliebollen, in a bowl. Then cut the oliebollen into small pieces and stir them into the whipped mixture. Grease the cavities of a muffin tin with some oil or place muffin liners in the baking pan. Divide the batter into them and sprinkle some small pieces of oliebol on top of the muffins before they go into the oven. Bake them for about 20 to 25 minutes in the oven. Dust them with some powdered sugar for originality (sarcasm, oops) and you have baked your first thing of 2026.
Have you already gotten enough ideas to use those leftover oliebollen? I hope so, because those oliebollen won't eat themselves, of course.
