3X a dish that you
only need one pot for
Last night I had Liesbeth on the phone:
“Yes and I had a really nice appointment and I got a delicious chocolate bar from Tony you know and that's already gone and stuff.”
“Ah, certainly your dinner?”
“Yes, indeed yes. Haha.”
Of course, nothing wrong with that, but my hands are starting to itch a bit. So Liesie, here are three one-pot dishes for you. Easy peasy. You can do this too.
Vegetable omelet
So simple, but a bit of chopping is required. Buy vegetables that you like and that you will use in the omelet. Think of zucchini, bell pepper, or spinach (or all of them). Sauté the onion, add the vegetables, sauté a bit, and then pour three beaten eggs over it. Lid on the pan, low heat, and let it cook for about 8 minutes. You're done. Also nice with a bit of grated cheese and don't forget the salt and pepper.
Salmon with spinach
Put a bit of olive oil or coconut oil in a pan. Let that heat up well and then add the salmon fillet. Then also quite quickly add the spinach, but be careful not to cook the salmon and spinach for too long. It's not necessary. Sprinkle salt and pepper over it and you're done. On the plate, you can sprinkle a bit of fresh olive oil and you could roast some pine nuts, but for that, you would of course use another pot.
Cheese fondue
I am really quite against cooking from packages, but there is a very good cheese fondue at the Appie (Emmi Swiss cheese fondue classic, I believe it's called). That is indeed a pack of cheese that you just have to let melt in the pan and you're done. Cut vegetables and bread to dip in the fondue and you seriously have a very cozy dinner on the table within ten minutes.
Then we have my dearest grandma with whom I email every day and whom I often ask for advice about everything, but especially about cooking. Her answer to the question about a good one-pot dish was this:
Mixture
sauté onion in oil
small pieces of potato too
coarsely chop leek
peel tomatoes
add a handful of green beans and mushrooms
add pepper, salt, and broth from a mushroom cube
When the mixture is cooked, you add cubes of cheese and finish it off with some parsley.
Would that be clear enough, Jet?
For me, more than clear. Although I know of course that this mixture, when made by my grandma, actually tastes the best.
