APPLE-CRANBERRY CAKE by Jenny

We all love something sweet, right? I love cake but usually it contains a lot of fat and little protein. That's why I often make my own cake, so I know exactly how much and what goes in it. This healthy version you can eat every day. And besides, it's just the tastiest cake I've ever made and I'm not exaggerating.

Cranberry and apple are a heavenly combination. This cake actually resembles a banana bread that I made once before, only I used applesauce instead of bananas/dates and added dried cranberries and apple pieces, which really made the cake very delicious.

What do you need for one cake?

• 3 eggs

• 340 grams of applesauce

• 1 Granny Smith apple

• 130 grams of oat flour/ultra fine oats

• 2 scoops of protein powder (I use vanilla flavor here)

• 1 tablespoon of baking powder

• 60 grams of dried cranberries

• coconut oil/cooking spray

Preheat the oven to 175 degrees and cut the apple into small cubes. Now mix the eggs, baking powder, oat flour, applesauce, and protein powder in a food processor or with an immersion blender until smooth. Finally, add the apple cubes and cranberries and stir briefly (do not mix). Grease your cake pan with coconut oil or spray or use a silicone cake mold. Pour the cake mixture into it. Place the mold in the preheated oven for 45 minutes and then: dig in!

Nutritional values per slice (if you cut ten slices): 153 calories, 22.6 grams of carbohydrates, 9.2 grams of protein, and 2.7 grams of fat.
