I have here I've described once how incredibly good avocados are for you. Put me on a deserted island with only these green fruits and I'll get quite far. I assume that people who had the idea that avocados are not very nutritious and actually fattening, have by now figured out that this is absolutely not the case. With almost all foods, the same is true: it’s all about balance. But well, that’s a whole different story. I want to talk about the avocado for a moment. We now know that it is a super fruit, and that’s why I’m giving you three of my favorite (easy!) recipes here. With avos, of course.

Shrimp boat

Believe me, you'll definitely impress the man with this. And it's so, so easy.

Here's what you need (for 2 people):

1 avocado
1 lemon
Dutch shrimp or crayfish
a dollop of (good!) mayo
olive oil
salt and pepper

Put the shrimp together with a dollop of mayo in a bowl and add a bit of lemon juice, a drizzle of olive oil, and some salt and pepper. Mix it all together and set it aside.

Cut the avocado in half and remove the pit (I used to always plant that in the garden, but nothing ever came out). Fill both halves of the avocado with the shrimp. A little extra olive oil, lemon juice, and a sprinkle of pepper on top - maybe a small dollop of mayo for the man - and you're done.

Luxury toast

At the editorial office, we are kings of making little snacks, as you know. Preferably on a rice cake, but when we really go all out, the base is a fresh sourdough or spelt slice. This toast is inspired by the site I love health:

Here's what you need and how to make it (for 1 person):

2 slices of bread
goat cheese (slices or soft goat cheese)
avocado
1 tomato
basil
salt and pepper
a toast maker or a grill pan

Very simple. Build a tower of goat cheese, avocado, tomato, basil, and salt and pepper on one slice of bread. Place the other slice on top and drizzle it a bit with olive oil. Pop it in the toast maker or in the grill pan (it takes a bit longer though). Yes, warm avocado is delicious.

And that is actually from the oven with an egg.
Here's what you need and how to make it (for 2 people):

1 avocado
2 eggs
goat cheese (optional)
salt and pepper

Preheat the oven to 180 degrees.

Cut the avocado in half and remove the pit. Cut a tiny piece off the back of both halves so that it stands well when you place it in an oven dish. Break an egg into each hollow of the avocado. Grind some salt and pepper over it and sprinkle some grated or crumbled goat cheese on top if you like. Let it sit in the oven for a quarter of an hour and you have the tastiest Sunday breakfast ever.
