TONIGHT YOU EAT THIS

Yay, I get to give you a glimpse into my life for a week.

How nice, I feel honored that I get to do this for Amayzine.

It's a busy time for me at the moment, as my second ‘Happy’ book has just been released.

I'm as proud as a peacock; if I had feathers, I would walk around all day with my feathers out.

Last week was the Book Fair in Antwerp and I was there for three days to sign my ‘Happy’ books. On the last day, the launch of ‘Happy Food’ took place, and I gave a lecture about my book that day. My publisher thought it was a good idea to introduce people to my philosophy on healthy eating.

I even said: ‘A lecture, who is waiting for that at the Book Fair now? It surely won't be busy.’ The night before, I also slept poorly and even dreamed of a room with only five people, including my publisher, the sound guy, and three other people who thought: let's go listen to what Ellemieke has to say.

The next day, I was quite nervous; I brought my two boys to support me. Kids always do well and break the ice (usually).

Fortunately, everything went well and the room was full! We even ran out of chairs, wow, I was so happy to see so many people interested in healthy eating, because that's what I'm doing it for.

I want to inspire people to eat healthy, to live healthy and to find a healthy balance with a family.

And that's what ‘Happy Food’ stands for. A book with easy recipes for the whole day for everyone.

Here’s a delicious easy recipe from ‘Happy Food’, enjoy!

VEGETABLE PASTA with pad thai sauce

We all know by now that it's good not to eat too many carbohydrates, especially if you want to lose a few kilos. This spaghetti is super healthy and very easy to make.

For the vegetable pasta

– 4 small zucchinis

– 4 carrots

– half a cauliflower

– a handful of unsalted peanuts

– coriander and parsley

– 4 tablespoons of black sesame seeds

– fresh coriander for garnish

For the pad thai sauce:

– 100 ml tamarind sauce

– 100 ml fish sauce

– 25 g coconut blossom sugar

– honey or xylitol

– 1 tablespoon chili pepper

– a splash of extra virgin olive oil

To get spaghetti strands, you need a spiralizer. Put the zucchinis and carrots through the slicer to get thin strands. Make the pad thai sauce: put all the ingredients in a bowl and mix. Place the vegetable spaghetti in a deep plate and add some raw cauliflower florets. Mix in the sauce, finish with chopped peanuts, coriander, parsley, sesame seeds, and lime juice.
