3X SOMETHING DIFFERENT ON YOUR SANDWICH
If you ask me, a brown sandwich with (peanut) butter is the tastiest thing there is. But yes, doing that every day gets a bit boring. Variety in your food is step number 1 towards a healthy life. So here I am to give you some ideas for what you can spread on your bread. And don't forget: make a little cake out of it and especially make the towers as high as possible. Cucumber, tomato, radish, avocado, alfalfa, bell pepper, grated carrot, lamb's lettuce, pickle, and all other vegetables that are delicious to eat raw and tasty in combination with sandwich spreads.
Zucchini spread
This is what you need
- 2 zucchinis
- 1 clove of garlic
- the juice of half a lemon
- 1.5 tablespoons tahini (sesame paste)
- half a teaspoon smoked paprika powder
- 1 tablespoon of olive oil
- a pinch of sea salt
- pepper
- sprouts (optional)
Here’s how to make it
Cut the zucchini into large pieces and put them together with the tahini, garlic, lemon juice, and some pepper and salt in a food processor. Add the olive oil while it is blending. Spread the mixture on the sandwiches and drizzle with extra olive oil, salt, and pepper. You can also use some sprouts as a garnish.
Avocado hummus with wasabi
This is what you need
Ingredients
1 teaspoon of paprika powder
1 clove of garlic
1 teaspoon wasabi paste (available in large supermarkets or maybe you saved it after a sushi order)
the juice of a quarter lemon
2 ripe avocados
coarsely ground salt and pepper
olive oil (optional)
Here’s how to make it
Wash the chickpeas and put them together with all the ingredients, except the olive oil, in the food processor. Start with a little wasabi; you can always add more later if you want it spicier. If you prefer a smoother consistency, add a bit more olive oil.
Bell pepper hummus
This is what you need
1 (400 g) can of chickpeas, drained
150g roasted red peppers from a jar
1.5 tablespoons tahini
1 clove of garlic, finely chopped
a pinch of ground cumin
a pinch of cayenne pepper
the juice of a lemon
a pinch of salt
a generous bunch of parsley
Here’s how to make it
Well, a child can almost do the laundry. Put all the ingredients in a food processor (except the parsley) and let it blend until it is a smooth mixture. Taste well to see what you might want to add a bit more of. A little salt? Maybe more cayenne pepper? Chop the parsley finely and mix it in with a spoon. And then: spread away!
These spreads are very easy to store in a Tupperware container in the fridge.
