4 X vegetables with your breakfast

Most people already cringe at the thought. Breakfast with a bite of spinach? Brrrr no. And purely is that of course not at all to be haggled with, but believe me: there are a lot of delicious breakfast dishes where you don't have to taste the vegetables at all. Because getting up with a bit of carrot, beet or kale is actually very good for you. It gives you energy, there are a lot of fibers in it (handy for your digestion) and it keeps your blood sugar levels low. This way you intercept candy attacks later in the day.

Zucchini pancakes

Jenny (once a week pop-up editor for Amayzine) made these delicious pancakes. And I did too. They are delicious. And believe me, you really can't taste the zucchini. However, you do need to persuade your boyfriend to take a bite. I called them monster pancakes and then he was sold. So simple, huh, those boys.

Red smoothie

Your smoothie doesn't have to be green. A red variant might be a bit more attractive. How about beets? A huge vitamin bomb and a favorite among runners, because you run super fast from it (you get more oxygen in your blood). I'll give you a recipe:

This is what you need

1 serving

1 banana

100 g blueberries (can also be frozen)

100 g beets (this is about one beet)

juice of half a lemon

a splash of coconut milk

Here’s how to make it

Put all the ingredients in the blender and let it blend until it's a smooth smoothie. If you find the smoothie too thick, you can add a bit more coconut milk or water.

Scrambled eggs with greens

When I say smashed avocado, you say yes, right? Make a delicious scrambled egg for yourself, serve it with (smashed) avocado and slices of tomato. Optionally all on a thick slice of sourdough. Then you have a serious king's meal and you'll be full all morning.

Pumpkin porridge

It takes some getting used to, but it's really just the name you have to get over. Have you ever heard of pumpkin porridge? This vegetable already has a very sweet taste by itself. Cook the pumpkin until soft, drain and puree. Then you actually already have porridge. You can add a bit of almond milk and cinnamon. Top off with a little granola for the bite or even a bit of fruit.
