A RECIPE FOR SPELT PIZZETTA’S

For a picnic or BBQ

Kiki asked me for a recipe for an easy pizza. Now I'm curious if she will actually do something with it or if she will just shove it under her boyfriend's nose again ((he touches pans, she doesn't). In my book there's a really tasty recipe for spelt pizzetta’s and I'm giving it to you now. Spelt is a type of grain and is much easier to digest than wheat (like in a ‘normal’ pizza).

Don't make it too difficult for yourself so that you don't spend the whole evening serving snacks in the kitchen. You can prepare the dough for the base in the afternoon, then it has time to rise. After that, it's just a matter of rolling it out, putting it in the oven for a moment, and topping it. Also nice to take along for a picnic. 

For the base

This is what you need

4 pizzas that you then cut into small pieces

500 grams of spelt flour (make sure to get 100% spelt, you can buy this at the organic supermarket)

7 grams of dried organic yeast

300 grams of water

1 tbsp extra virgin olive oil

a generous pinch of salt

Here’s how to make it

Preheat the oven to 220 degrees. Mix the spelt flour, yeast, and water together in a food processor or by hand. After 3 minutes, add the olive oil and salt. Knead it with your hands if you've just used a food processor. Knead until you have a smooth ball, place the ball in a bowl and cover it with a clean tea towel. Let it rise for 30 minutes. If you press your finger into the dough and it doesn't spring back immediately, then it's done rising.

Divide the ball into 4 small balls. Knead them separately for a moment. Sprinkle some spelt flour on a work surface and roll the balls into thin pizza bases (about ½ centimeter thick). Bake the pizza bases two at a time for 7 minutes (unless you have a giant oven, of course). Place the base on a piece of baking paper on a baking tray and slide it onto the bottom rack of the oven. The pizza should be crispy and may puff up a bit with air. That's okay, just poke a hole in it.

Remove the pizza from the oven, brush it with olive oil, and then sprinkle some fresh pepper and salt on top. This is already very tasty, but you can also work with different toppings. Cut the pizzetta into small pieces of various sizes with a pizza cutter. It looks nice and very homemade.

Different toppings can include:

Buffalo mozzarella – cherry tomatoes (briefly bake in the oven) – basil

Goat cheese – figs – honey

Ricotta – grilled vegetables – oregano

Olives – thyme – extra olive oil
