A SIMPLE RECIPE FOR QUINOA SALAD
And what shall we cook again tonight? Not too heavy, because it's summer, but it doesn't have to be cold either, because it's not that warm either. I'll give you a hand. It will be quinoa salad. Quinoa is one of the few superfoods still in my kitchen cupboard (I'm actually a bit done with the superfood hype). I love it, it's super duper healthy, very nutritious, and easy to digest. I'll give you a recipe for a easy salad with quinoa. For the man, you can grill a piece of meat or fish alongside it. Well, for yourself, of course, that's not a bad idea either.
Red quinoa salad
Ingredients
for 4 people
250 grams of red quinoa (white is fine too, of course)
half a pumpkin
1 pomegranate
2 handfuls of walnuts
1 bunch of fresh parsley
1 bunch of fresh mint
juice of half a lemon
1 tablespoon of sea salt
olive oil
Preheat the oven to 220 degrees. Cook the quinoa as per the package instructions and let it cool. Cut the pomegranate in half and knock the seeds out (otherwise, check out a video by Jamie Oliver on YouTube to see how he does it). Mix the seeds with the quinoa. Cut the pumpkin into thin slices and place them covered with a bit of olive oil in the oven for about 60 minutes. Blend the herbs in the mixer until they are super fine, but who knows, you might be very good with a knife. Mix the herb blend with the quinoa, 3 tablespoons of olive oil, lemon juice, salt, pumpkin, and the broken walnuts. Delicious for lunch or (in a slightly larger portion) for dinner. Of course, you can also use all sorts of other vegetables, just be creative.
