This is Florian. I only see him or have him on the phone when there is a party. A party where bubbles are served. Veuve Clicquot to be precise, and that just happens to be one of Amayzine’s favorite champagnes. Enough reason to join him at the table. Are you reading along?
Where in the world is your favorite restaurant?
‘There’s a place in Haarlem called ’Ratatouille’ by star chef Jozua. Fantastic dishes at a fair price. You should also definitely go to ‘Brasserie Julien’ in the center of Paris. A monumental building with a special decor, story, and atmosphere, and especially beautiful French dishes.’
And who would you really like to have dinner with? It can be anyone.
‘Again, two answers here. Dining with Sir Richard Branson. I think you could be inspired for another five years, but then just relax and laugh at the bar with comedian Ronald Goedemondt.’
Where do you prefer to sit in a restaurant?
‘To be honest, usually somewhere where I have a good overview of the space. With my hospitality background, I like to keep an eye on how things are going.’
What do you always hope is on a menu?
‘I would say… Champagne! And something that pairs well with it.’
What do you dread?
‘A whole fish. I don’t really like eye contact with a fish.’
Do you find your way on the wine list?
‘I’m not a wine specialist, but I am a wine enthusiast. Of course, I always try to find the right combinations. The nice thing is that champagnes also pair very well with food, and preferably one of our brands.’
Starter or dessert?
‘Including amuse and cheese, is that also possible? If I have to choose, then a starter. In the Netherlands, I thought you get a cookie with coffee.’
What fun project are you currently working on?
‘The advantage of working for different premium wine & spirit brands is that you are mostly busy with only fun things. We have big plans for the summer with Veuve Clicquot Rich and Moët & Chandon Ice Impérial. We are currently in the middle of event preparations for this. There are also a number of special introductions coming up that I unfortunately can’t say much about yet. Oh yes, a little trip to the champagne region in the summer should not be missed here.’
