Kerstmorgen muffins met gezouten karamel warme chocolade

A very good morning, friend. You were waiting for it, a fresh Sunday morning recipe. I can tell you: better jump out of bed now, because I have something delicious for you. Turn on those kerst hits, grab a match for the candles and plug in the Christmas lights. These Christmas muffins are out of this world, so tasty. And because calories don't really count this month and we can't do anything about our addiction, make some salted caramel hot chocolate to go with it. Just because you can and because it's delicious. Now come on, run into that kitchen.

Christmas muffins

10 pieces

  • 250 grams of spelt flour
  • 3 tsp baking powder
  • 100 grams of white caster sugar
  • 1 tsp cinnamon
  • a quarter teaspoon of nutmeg
  • 2 clementines
  • 125 ml whole milk
  • 75 ml melted butter
  • 1 egg
  • 175 grams dried cranberries

1. Preheat the oven to 200 degrees.
2. Put all the dry ingredients in a large mixing bowl, also grate the peel of the mandarins and add that as well.
3. Put the milk in a measuring cup, squeeze the juice from the clementines and fill up to a total of 200 milliliters.
4. Add the egg and oil to the wet ingredients.
5. Add the milk mixture to the dry ingredients and mix until you have a smooth cake batter.
6. Add the cranberries to the cake batter.
7. Grease the muffin tins and divide the mixture among the tins.
8. Bake the muffins until done in twenty minutes.

Salted caramel hot chocolate

For 2 people

  • 500 ml whole milk
  • 100 grams of dark chocolate
  • 3 tablespoons salted caramel
  • whipped cream

1. Put the water and sugar in a tall pan and bring to a boil over medium heat. DO NOT stir.
2. Let the sugar mixture simmer gently until you get a nice, light caramel color. Then remove the pan from the heat.
3. Lightly heat the cream in another saucepan.
4. Add the cream to the caramel and stir well.
5. Add the butter and thicken it into a nice sauce. The longer you let the sauce reduce, the thicker it becomes.
6. Add coarse sea salt to taste.

For the caramel

  • 200 grams granulated sugar
  • 75 ml water
  • 125 ml whipped cream
  • a generous tablespoon of butter

1. Heat the milk for the hot chocolate in a saucepan.
2. Break the chocolate into pieces and add them to the milk.
3. Heat everything and divide it between two large mugs.
4. Top with whipped cream and plenty of salted caramel.
