You do this with your leftover Sinterklaas treats
When I walked into the editorial office first this morning, I quickly flew past all the desks before the crowd would storm in to collect the last pepernoten. and chocolate letters Don't worry, they didn't disappear into the trash can, girlfriend, but into a bag to take home. Because what do you do with all that leftover candy from yesterday? EXACTLY! Recycle. You understand that I will show up ten minutes earlier at the editorial office tomorrow to play Sinterklaas. Only then with repurposed chocolate letters and smashed speculaas… 3, 2, 1 and bake away.

1. Melt the chocolate au bain marie and let it cool slightly.
2. Grease a baking pan of about 20 by 30 centimeters and line it with baking paper.
3. Sprinkle a handful of pepernoten over the baking pan.
4. Then pour the melted chocolate over it.
5. Evenly distribute all your candy over the baking pan and press it into the chocolate.
6. Place the baking pan in the refrigerator for at least three hours or in the freezer for an hour.
7. Break the chocolate into pieces and dig in.
Speculaas smoothie
- 1 banana
- 50 grams of speculaas
- 30 grams of oatmeal
- 250 ml almond milk
- pinch of speculaas spices
1. Put the banana, speculaas, oatmeal, and almond milk in the blender and mix until you get a smooth smoothie.
2. Pour the smoothie into a tall glass and sprinkle with some speculaas spices.
Mandarin-ginger marmalade
- knob of butter
- 10 mandarins
- zest of half a lemon
- 400 gram suiker
- 1 vanilla pod
1. Grease the bottom of a large pot with butter.
2. Wash the mandarins, remove the crowns, and halve them.
3. Cut thin slices from the mandarins.
4. Halve the vanilla pod and scrape out the seeds with a sharp knife.
5. Put the mandarin slices, zest, seeds, and sugar in the pot and bring to a boil.
6. Stir with a wooden spoon and keep stirring until it boils.
7. Reduce to low heat and let simmer for at least two hours.
8. Let cool and store the marmalade in jars.
9. Delicious on the brunch table or with a piece of meat during the Christmas dinner.
Quick speculaas tiramisu
- 250 grams mascarpone
- juice of 1 orange
- 10 speculaas cookies
- 250 ml whipped cream
- piece of almond paste
- cocoa powder
- 6 glasses
1. Squeeze the oranges.
2. In a large bowl, beat the mascarpone together with the almond paste until smooth.
3. In another bowl, whip the cream until stiff.
4. Fold the whipped cream into the mascarpone mixture.
5. Dip the speculaas cookies in the orange juice and distribute half over the glasses.
6. Spread half of the mascarpone mixture over the glasses.
7. Add the rest of the speculaas cookies to the glasses.
8. Finally, distribute the rest of the mascarpone over the glasses.
9. Sprinkle with cocoa powder.
