5x breakfast for your hangover

Yeah friend, too deep into the glass looked, huh? And that last series of Flügel might not have been the best plan for the evening. Here you are, with the baked pears. Better said: with a thick fat hangover. Now that the damage is done, we might as well make sure to ease the pain a bit with a good portion of comfort food. From a super deluxe cheese omelet to a huge stack of American pancakes with caramelized banana; which anti-hangoverbreakfast are you going for?

Egg feast with aged cheese and Parma ham

1 red bell pepper, chopped

handful of mushrooms, sliced
4 slices of Parma ham
4 eggs
aged cheese
olive oil
pepper
salt

1. Heat a splash of olive oil in a frying pan and sauté the bell pepper and chestnuts for 2 to 3 minutes.
2. Heat another frying pan (without oil or butter) and fry the slices of Parma ham until crispy.
3. Crack the eggs over the bell pepper and mushrooms, place the slices of Parma ham on top, and sprinkle the grated cheese over it.
4. Let the egg whites set and season with salt and pepper.

Tuna melt

leftover turkey or chicken
1 can of tuna, in olive oil
mayonnaise
1 tbsp capers
1 tsp sambal
of butter
slices of cheese of your choice (I prefer Emmental or Gruyère with this)
1 red onion, sliced

1. Season the tuna with a generous tablespoon of mayonnaise, the capers, pepper, and salt.
2. Top two slices of bread with tuna salad. Distribute the cheese, sambal, and red onion over it and place the two remaining slices of bread on top.
3. Heat the butter in a frying pan and fry the tuna melt on both sides until golden brown.

Baked beans

(maybe heavy stuff for you, but your love will be on their knees for you)
For 2 people

1 tbsp olive oil
6 slices of pancetta
1 finely chopped onion
1 clove of garlic, crushed
100 g chorizo sausage
2 tsp oregano
1 tsp smoked paprika
1 can of diced tomatoes
1 can of cannellini beans, rinsed and drained

It seems like a small addition, but it has such an incredibly large effect. The crispy, salty breadcrumbs elevate all the flavors in the pasta and suddenly make the simplest pasta spectacular.

1. Heat the oil in a large pan and fry the pancetta until crispy.
2. Drain on paper towels to get rid of excess fat.
3. Lower the heat and sauté the onion, garlic, and chorizo in the same pan until the onion is soft.
4. Add the herbs and diced tomatoes along with 100 ml of water.
5. Bring the tomato mixture to a boil, then lower the heat slightly and add the beans.
6. Let the baked beans simmer for at least a quarter of an hour until it thickens and season with salt and pepper.
7. Serve the beans in two bowls and top with the crispy pancetta.

Silky smooth cheese omelet

3 eggs, separated
2 tbsp cream

knob of butter
40 g soft goat cheese
40 g grated Parmesan cheese
2 tbsp mascarpone

1. In a bowl, whisk the egg yolks with the cream and some salt and pepper.
2. In another bowl, beat the egg whites until stiff and fold in the egg yolk mixture.
3. Melt the butter in a medium frying pan.
4. Pour the egg mixture in and cook for 2 to 3 minutes. Distribute the cheeses and mascarpone over one half of the omelet.
5. Carefully fold the other half over the cheese filling and cook the omelet for another 1 to 2 minutes.
6. Serve with fresh parsley.

American pancakes with fried banana and maple syrup

180 ml milk
2 tablespoons vinegar
125 grams flour

2 tablespoons sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 egg

30 grams melted butter

1 banana

maple syrup

1. Mix the milk and vinegar together in a bowl and let it sit for five minutes to become slightly sour.

2. Then mix the flour, sugar, baking powder, salt, and baking soda together.

3. Whisk the eggs and butter into the milk and vinegar mixture.

4. Combine the flour mixture with the wet ingredients and mix it with a mixer until you have a smooth batter.

5. Heat a pan over medium heat.

6. Add oil to the pan and pour about 4 tablespoons of the batter into the pan.

7. Cook the pancakes until golden brown on both sides.

8. In another pan, heat some butter, slice the banana, and add it to the pan. Cook the banana until golden brown on both sides and add a generous splash of maple syrup at the end.

9. Spoon the banana mixture onto your pancake stack and serve with some extra maple syrup if desired.
