Cheese fondue with tequila

We are already familiar with that splash of wine in your cheese fondue. As we stand on the threshold of 2020, we want something a bit heartier, right? And since this is indeed the week of cheese fondue (we're already going all out with the team at Maxwell Café in Amsterdam tomorrow), I thought it would be nice to give you a 3.0 variant. Well, I have one! How delicious to have a cheese fondue with chorizo, jalapeño, and tequila in the mix? I would say: let’s dip and dunk away.
Nachos, bread, vegetables: you can dip anything in it. Queso fundido literally means: melted cheese. Traditionally, soft Mexican cheeses like Asadero, Chihuahua, or Manchego are used, but in principle, you can use any melting cheese that creates those good strings.
Tequila and spicy peppers
In a cast-iron pan or heat-resistant dish, the dish is built up in layers. The cheese is complemented with spicy chorizo, onion, bell pepper, and jalapeños for the necessary kick. The whole thing is topped off with some lime and tomato salsa. Want to make it yourself? This version of queso fundido contains all that deliciousness.
If you thought that was all, you are mistaken. Because the original Mexican version is flambéed or flavored with tequila. It gives the cheese a shiny layer and just a slightly different texture. Try it out for yourself!
